Birch & Barley and Churchkey are two concepts in one building that are ambitious, world-class beer programs with food to match. Our kitchen will craft elegant, thoughtful, fine dining food for Birch & Barley and create bar food for Churchkey with the same care and quality ingredients. We're looking to come out of Covid hibernation better than ever with new Chef, new kitchen team, and revamped kitchen.
We will be working with local farms and producers and be driven by the seasons. We’ll utilize fermentation, and other preservation techniques. We’ll make several breads and naturally fermented doughs with local flour. We’ll make charcuterie and cook things in pork fat but we’re still going to get really excited about vegetables. We’re going to have fun and cook good food to make guests and ourselves happy. We’re going to work as a team and learn from each other.
