Hey Kiddo Chef de Cuisine
Compensation: $75,000 to $90,000 a year

Id Est Hospitality Group is hiring a Chef de Cuisine to oversee all aspects of back-of-house operations at Hey Kiddo, their newest Denver-based concept set to launch in November. This position will require an individual with strong leadership and organizational skills, along with experience in adhering to and managing a budget. The CDC will be held accountable for a wide range of responsibilities that fall within the scope of culinary leadership, team management, and financial operations. 



Job Responsibilities:

  • Directs kitchen operations and culinary strategy with the overarching goals of maximum profitability and quality and minimal food waste.
  • Develops seasonal dishes and prepares large menu changes. This includes recipe research and development, training chefs, and making adjustments when necessary.
  • Seeks and vets new vendors that adhere to IE’s food sourcing ethos of regenerative agriculture, sustainable development, and supporting local communities while balancing food costs. Maintains positive relationships with current vendors and farmers. 
  • Establishes purchasing and inventory standards that ensure maximum efficiency in terms of minimal waste and unnecessary inventory expenses. 
  • Ability to interpret and analyze financial documents including budgets and P&L reports.
  • Ability to identify and resolve financial issues and meet goals set by leadership and accounting teams.
  • Participate in the hiring, training and development, scheduling, evaluating, and termination of employees.
  • Use effective people management techniques to serve as a pillar of IE restaurant leadership - maintain FOH and BOH engagement and excitement. Serve as a mentor and coach to all employees and work in coordination with FOH leaders to drive cohesion among all employees.
  • Manage kitchen staff to ensure all culinary operations are executed correctly and efficiently. This includes assigning tasks, task planning, and supervising staff.
  • Ensure all FOH and BOH staff adhere to food safety and hygiene regulations.
  • Ensure full compliance with health department standards and regulations.
  • Ensure all equipment is in proper and safe working order. Scheduling and maintaining routine maintenance schedules and other maintenance as needed. 


Candidate Requirements: 
  • 5 years of chef experience, including 2 years of management experience.
  • Experience in a high-caliber environment with high expectations.
  • Proven culinary excellence. Experience in casual and fine dining settings.
  • Diverse culinary experience, specifically with woodfired cooking techniques.
  • Proven leadership experience that includes managing, developing and training, mentoring, and coaching a culinary team.
  • Availability to work onsite with a flexible schedule including evenings, weekends, and holidays.
  • Ability to lift up to 50 pounds.
  • Ability to exert well-paced mobility for up to 8 hours, standing or walking in a restaurant environment.
  • Ability to operate commercial equipment including stand mixers, ovens, torches, etc.
