Located in West Town Chicago, Aya Pastry celebrates the best of seasonal ingredients, with products crafted with precision and love. Aya Pastry offers a creative take on signature breads along with celebratory cakes, whimsical sweets, and breakfast pastries.  The expansive bakery produces baked goods in large volume for our wholesale and retail customers.

Aya won Eater’s National Pastry Chef of the Year in 2016, was nominated in 2017 for James Beard Outstanding Pastry Chef, and won the Chicago Tribune’s Pastry Chef of the Year in 2018.  The bakery recently received the "Best New Baked Good Empire" title for the 2021 Eater Awards.  Come on by to join our amazing team!

Responsibilities

  • Daily bake off of our pastries, breads, and viennoiseries with a 3AM starting time.
  • Daily production of all bread orders; including but not limited to mixing, shaping, and baking of doughs and viennoiseries.
  • Assist in kitchen organization, equipment maintenance and cleanliness.
  • Daily check of pars and quality.
  • Fulfill orders for deliveries given by Head Bread Baker and Bread Sous Chef.

Requirements 

  • Punctuality is a must for this 3AM bake-off shift position.
  • Ability to lift 50 pounds
  • 1 year or more experience in pastry, savory, or bread production.
  • Knowledge of lamination and previous use of bakery equipment preferred.
  • Must maintain a high level of cleanliness and be aware of all food safety standards (must have Illinois' food handler's certificate).
  • Must have a flexible schedule including the ability to work on holidays.
  • A great attitude, an eagerness to learn, and passion for bread baking.

Compensation: Hourly (Based on Experience) plus tips

Located in West Town, Pastry Chef Aya Fukai has opened her own bakery, Aya Pastry, which utilizes her extensive pastry experience to showcase artisan breads and whimsical cakes and pastries. Aya’s background in fine dining restaurants and upscale hotels brings a new level of quality and understanding of her clients. The mission at Aya Pastry is to support Chicago chefs and business owners by providing an extensive bread and pastry program unmatched by other bakeries.

Aya Pastry always keeps the chef in mind when creating breads. The thoughtful and versatile bread menu includes breads such as: country sourdough, signature baguettes, shokupan and chicago buns. Pastries will include unique savory and sweet croissants, jumbo “dino” macarons, Samoa cakes, pancake cookies, as well as a colorful array of celebration cakes, which will be available for wholesale purchase.

Aya, who was nominated in 2017 for James Beard Outstanding Pastry Chef and won Eater’s National Pastry Chef of the Year in 2016, has worked for many respected restaurants throughout Boston and Chicago. Most recently, Aya cultivated the bread and pastry program for the two-Michelin starred restaurants, Sixteen at Trump and Ria at the former Elysian hotel. The management team at Aya Pastry shares Aya’s impressive background and experience in fine dining and upscale hotels.
