Job Details
The Greenwich, a modern American restaurant in Denver's River North (RiNo) neighborhood is looking for a Sous Chef to join our team.  The restaurant serves fresh, ingredient-driven dishes in an upscale casual (read: irreverent and fun) atmosphere.  

Helmed by Delores Tronco (founder of NYC restaurant The Banty Rooster and Denver's Work & Class) and Justin Freeman, formerly of NYC restaurants Upland, Nobu, and Cook Shop, The Greenwich is focused on quality and technique while not taking itself too seriously.

Major Sous Chef Job Responsibilities:

  • Lead, mentor, and manage culinary team
  • Develop and plan menus and daily specials
  • Create prep lists for kitchen crew
  • Manage food costing and inventory
  • Maintain standards for food storage, rotation, quality, and appearance
  • Ensure compliance with applicable health codes and regulations

Oversee Food Quality

  • Make sure that all the right techniques and processes are being followed correctly
  • Check quality of material and condition of equipment and devices used for cooking

Develop Menu

  • Be part of menu development throughout the seasons, bringing ideas to the table that have worked in the past and thinking of new approaches for the future
  • Prepare a wide variety of savory food items 
  • Create new and exciting dishes that are in line with our ideals and engage the interest of customers

Control Food Cost

  • Maintain target at 30%, with open discussion of what we have in the house vs. what we need for the rest of the week
  • Monitor stocks for ingredients and make appropriate orders within budget

Manage Schedule

  • Weekly schedules
  • Vacation time and scheduled days off
  • Monitoring payroll and overtime

Expo

  • Be able to expo Dinner Service

Communication with FOH

  • Clear communication of dishes that are changing and allergies
  • Tasting the line

DOH Ready

  • Ensure that kitchen is clean, nothing on the floor and all orders are put away properly.
  • Ensure that everyone in the kitchen is following FIFO
Requirements:
  • Proven experience as Sous Chef or relevant role
  • Great attention to detail and creativity
  • Organizational and leadership skills
  • Willingness to continue growing in professional knowledge
  • In depth knowledge of sanitation principles, food preparation, and nutrition
  • Willingness to work with others and help build a culture of one team

Compensation: Salary ($50,000.00 - $58,000.00)
