OPENING FALL 2022! Jiwa Singapura is seeking talented, highly motivated individuals who want to be part of the region’s premier Singaporean concept. Team up with talented individuals who are genuinely passionate about hospitality in this unique opportunity in Tysons. Located on the second floor at Tysons Galleria, our 10,000 square foot restaurant is the second venture from the minds behind Cranes Spanish Kaiseki a Michelin Starred restaurant in Washington, D.C.

Balancing inspiration from the modern built forms of Singapore with traditional patterns to create a restaurant space that is imbued with culture. The elegant space includes 30ft ceilings, 2 beautiful bars, chefs table, and an expansive patio.

Bringing the flavors of the East to Virginia, Chef Mamu Rashidin is introducing dishes not seen in the region. Highly focused on seafood, Jiwa will offer small plates, a la carte, and a "makan-hidang" a chefs tasting menu that highlights the flavors of Singapore.

The Role:

Sous Chefs are responsible for running back of house (BOH) operations and shifts, including supervision of kitchen, dish and all other BOH teams as well as the preparation, presentation and service of menu items.

 

Sous Chef Requirements

  • 3+ years proven work experience as a Sous Chef.
  • Interest in sustainable farming, the local grain economy, and seasonal baking.
  • Advanced knowledge of culinary techniques.
  • Able to operate cutting tools and kitchen utensils.
  • Ability to follow established health and safety regulations.
  • Flexibility of schedule.
  • Ability to lead a small team of cooks.
  • Able to multi-task in discreet time periods.
  • Good organizational skills.
  • To successfully perform essential job duties, required to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 pounds or less.
  • The position requires manual dexterity; auditory and visual skills; and the ability to follow oral/written instructions and procedures.
  • High school diploma or equivalent; Diploma from a culinary school will be an advantage.

Key Responsibilities and Accountabilities

  • The position of Sous Chef requires liaising with the Executive Chef and Chef de Cuisine on all operational needs and ensures that all food preparation and production is carried out to the highest standard.
  • Developing your skills in cooking and training of other staff and always maintain a positive attitude.
  • Food preparation and servicing with an emphasis on quality, freshness and timing.
  • Able to produce a wide range of food styles at any given location 
  • Ensure knowledge of the products are maintained and communicated to all relevant personnel.
  • Responsible for completing your mis en place lists and par levels.
  • Learn and record skills and recipes from other members of the department.
  • Liaise with the Chef in charge and implement new menus/ dishes/ recipes and systems.
  • Ability to work under pressure and be flexible to respond to a range of different work situations
  • To supervise the mise-en-place and cooking of food for service, ensuring the highest of standards are maintained 
  • To ensure your section is kept to the highest standard of cleanliness and that each member of your team is fully conversant and comply with the Health, Safety and Hygiene regulations
  •  
  • To be self-driven, passionate and initiate new ideas for menus, garnishes etc. 
  • To ensure all members of your team are familiar with their daily tasks and provide on-going refresher training as required.
  • To ensure your section and fridges are kept clean and that there is a proper rotation of stock in your fridges.
  • To ensure you give a proper hand over to the next shift/Chef  and that all the mise-en-place is in order before you finish your duty and before you go on your days off.
  • To assist with any other requests as instructed by Chef de cuisine or Executive Chef’
