Job Details
Cooper's Family Hospitality is happy to announce that we are searching for a Culinary Director to manage and oversee our four locations:

- Cooper's Craft & Cocktails East Village
- Cooper's Craft & Cocktails Chelsea
- The Gray Mare
- Sláinte


JOB REQUIREMENTS:

- Creative but most importantly highly organized

- Focus on quality ingredients and bringing each locations food program to the highest possible level

- Ability to handle the bar/restaurant groups 4 locations and coordinate scheduling, cost control, labor and inventory streamlining

- Strong leadership skills



CULINARY DIRECTOR DUTIES:

- Recruitment of all BOH staff (Placing ads for staff, conducting interviews, and following up with references)

- Induction of all BOH staff (Completing necessary paperwork for lawful hiring including employee handbook with new hires, making new hires aware of labor laws, compliance, safety etc.)

- Creating location-appropriate seasonal menu changes at each venue

- Training new staff on all dishes (Teaching new hires all of the dishes/prep at that specific location)

- Conducting staff training with existing staff members ( Conducting frequent team training sessions with staff members )

- Overseeing & Managing BOH staff scheduling and vacation requests

- Conducting weekly checklist assessments for any possible DOH violations (Doing walkarounds in each kitchen to ensure DOH standards are being maintained for A grade)

- Managing ordering/inventory at each location (Placing orders with distributors)

- Conducting regular price comparison assessments with existing vendors and their competitors for guaranteed best pricing

- Constant quantity, quality, and presentation/plating control on all aspects of the menu items



PREFERRED QUALIFICATIONS:

- Culinary degree preferred

- Previous experience managing multi-unit venues

- Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation

- Proficient computer skills
