Join the Opening Team! Apicii, the nationally-acclaimed hospitality group led by Michelin-starred Chief Culinary Officer Jonathan Benno, has partnered with Fortuna Collection to launch multiple dining experiences within the newly constructed Grayson Hotel, 30 W. 39th St., New York City. Opening Summer 2022.

House-made desserts and pastries are an integral component of our guest experience. The Pastry Sous Chef is in charge of overseeing and executing those menu item preparations under the guidance of Corporate Pastry Chef, Alessandra Altieri.

Responsibilities:

● Oversee pastry department, working in collaboration with fellow culinary management team

● Manage and participate in pastry production. Ensure strict adherence to recipes, uphold quality and standards.

Train, develop and mentor pastry team members.

● Monitor and order ingredients, supplies and equipment

● Ensure health and safety regulations

● In collaboration with Corporate Pastry Chef, develop new seasonal recipes and menus and keep up with the latest trends

Must Haves:

The ideal candidate must have previous experience as a Pastry Sous Chef or other relevant role. This person must also have excellent communication and leadership skills.
