Job Details
The Mattos Hospitality Team is looking for a Pastry Sous Chef to join the group for our newest operation!

Nine Orchard is a luxury, boutique hotel in a beautiful period building on the Lower East Side, operated by the team at Mattos Hospitality who also own and operate the New York classics, Estela and Altro Paradiso. The Food and Beverage program at Nine Orchard will include an elegant, upscale restaurant, a neighborhood bar, lounge, rooftop bar, in-room dining and private event spaces.

The Pastry Sous Chef will assist the Executive Pastry Chef with the running and management of the kitchen. This candidate will be able to work well under pressure, execute a range of daily tasks; ensure the kitchen produces exemplary food while simultaneously fostering a healthy, happy work environment.  This candidate will have the ability to lead and manage every aspect of the kitchen as it is imperative for this role.The pastry sous chef will maintain the quality of production and quality of the desserts sent to the guest during the services.  The Pastry Sous Chef will also will be able to work close to the executive in the creation of new menus and pastries.

Personnel Management:

● Steps into a leadership role in the absence of the Executive Pastry Chef.
● Can oversee kitchen operations in accordance with company standards.
● Consistently offers strong mentorship to all kitchen staff, guiding and uplifting both newer and
experienced cooks.
● Assist the Executive Pastry Chef in managing all pastry employees and production.
● Assist the Executive Pastry Chef with scheduling and labor controls.
● Assists the Executive Pastry Chef with facilitating in room dining, events, and restaurant operations as
needed.
● Train new and existing kitchen staff on the preparation, arrangement, and plating of dishes.
● Works seamlessly with the front-of-house management team to ensure smooth and efficient restaurant
operations.
Culinary Oversight:
● Assist the Executive Pastry Chef with creation and production, working closely to build comprehensive
pastry dishes.
● Executes menu items from start to finish, upholds high individual standards, and enforces the same for
others.
● Assist the Executive Pastry Chef with costing and inventory, in order to ensure budgets are met while
waste is avoided.
● Exhibit strong interpersonal skills, by communicating effectively, and is invested in promoting a positive
kitchen culture.
● Motivates and inspires cooks to grow and thrive; excels in teaching and mentorship.
● Upholds the highest standards of food safety, food handling, and sanitation requirements in order to
ensure the health and safety of staff and guests.

JOB DESCRIPTION

● Understands and uphold sanitary standards and employee health checks in relation to COVID-19
requirements.
● Ensure all staff members adhere to culinary standards and regulations.
Service Standards
● Maintain the high standards of cleanliness and appearance throughout all areas of the restaurant.
● Follow all company policies and procedures including recently created and evolving COVID guidelines.
● Follow all Department of Health (DOH) standards.

Physical Demands
● The physical demands for this position are frequently lifting up to 25 pounds, occasionally lifting up to 50
pounds, standing for long periods, bending, and moving intermittently during working hours.
