FOOD RUNNER JOB DESCRIPTION

This job primarily includes the duties of busser, food runner, and barback. You will be required to assist the servers and bartenders with anything they need for service. This position is ideal for those new to the industry or those who seek to decide which position suits them best within the restaurant industry. No previous restaurant experience is required.

GENERAL EXPECTATIONS

  • Ensure that all guests feel welcome and are given responsive, professional, gracious service at all times
  • Maintain clean and organized workstations that are cohesive with the restaurant’s philosophy, culture, and standards of excellence.
  • Recognize or seek areas for staff and restaurant improvement and offer positive solutions for change.
  • Operate within the restaurant daily with efficiency, respect, friendliness, professionalism, teamwork, knowledge, patience, awareness, compassion, courtesy, and initiative.
  • Understand completely all programs, procedures, standards, specifications, guidelines, and training programs.
  • Understand the philosophy of management and owner. Displays consistent attention to detail and follow-through of all restaurant policies.
  • Represent the restaurant professionally through effective communication, cooperation, and relationships with all business partners. 

SPECIFIC DUTIESThis position will include, but is not limited to, the following duties

  • Arriving on time and in correct attire for each shift
  • Communicating efficiently with both coworkers and management
  • Setting up the bar for service before opening and breaking down at close, following stated procedure
  • Maintaining cleanliness of all restaurant and bar areas during service, restocking as necessary
  • Retrieving anything bartenders & servers may need during service efficiently and timely
  • Running food items from the kitchen to the guest correctly
  • Cleaning and organizing the restaurant during the shift and after closing
  • Assisting guests in any way necessary, and informing bartenders and management about any guest incidents or issues

 

FOOD RUNNER/BUSSER OPENING PROCEDURE

  • Set up expo line with ketchup/aioli/butter ramekins (and to go ramekins) (refer to expo par sheet) 
  • Stock all plates at expo for service
  • Stock all to-go items (cardboard & plastic containers, togo ramekins & lids, paper bag of both sizes)
  • Stock butter knives/demi spoons/cocktail forks
  • Fold linen for bread plates/ mac and cheese plates
  • Stock bev naps for service (purple napkins)
  • Check bathrooms for soap/paper towels/trash/toilet paper and make sure all surfaces are clean and presentable
  • Stock cornbread in bread warmer for service
  • Stock polishing rags/towels in polishing area
  • Clean up staff meal prior to service

 

FOOD RUNNER/BUSSER ONGOING SIDE WORK

  • Run food/keeping eyes constantly on expo
  • Assist servers with crumbing/bussing tables
  • Check the back for silverware/plates/glasses to be polished
  • Keep incoming dishes in the dish area organized and glassware racked and consolidated. Push dirty glass rack over to dishwasher when full .
  • Bring clean, polished wares back to their homes
  • Reset every table within 2 minutes of guests departure.
  • Replenish ketchup/aioli/butter ramekins as needed
  • Replenish bread plates/butter knives/demi spoons as needed
  • Replenish cornbread in bread warmer as needed

FOOD RUNNER/BUSSER CLOSING SIDE WORK

  • Break down expo line, plastic wrap ketchup/aioli/butter and store in walk in fridge
  • Discard cornbread from warmer
  • Wipe down expo counter and sweep floor
  • Take out expo trash
  • Polish ALL silverware/glasses/plates and return to their homes
  • Discard any staff beverages on back rack
  • Take trash bins from out back to curb on: SUNDAY, TUESDAY, THURSDAY,
  • Clean bathrooms, check toilet paper, paper towels, soap, empty trash

Located in the historic Royal Theatre, Rex at the Royal brings low country cuisine to South Street. With an elegant dining room, private dining spaces, and a sprawling bar, Rex's culinary and beverage programs take inspiration from our new home in the Royal Theatre, a community-focused film and music hall at the center of 20th century life in Philadelphia.

The Royal, and its surrounding neighborhood, stood as defining elements of the Black experience in Philadelphia during the 20th century. Entries in the “Green Book” identified the South Street neighborhood and its locales as friendly and inclusive, which in turn drew African-Americans from near and far as travelers passed through Philadelphia. The Philadelphia Tribune, which is the oldest continuously published African-American newspaper in the US, is located just around the corner on 16th St.

At the turn of the century, the City’s catering industry was largely controlled by Black chefs and companies – they were among the wealthiest Black citizens. One famous chef, H. Franklyn Hall, was one of Philadelphia’s best-known chefs and penned the cookbook, “300 Ways to Cook and Serve Shellfish”. This essential cooking literature served as an inspiring tenet for what became the Rex at The Royal menu.

In addition to serving guests for dinner and Sunday brunch, we've recently expanded our weekday hours to include café breakfast and lunch service as well as an expertly curated bottle shop, with wine and beer available to-go.
