AS THE EXECUTIVE CHEF/CHEF MANAGER you will be responsible for overseeing BOH Operations while maintaining a safe and sanitary work environment for the staff.

You will prepare and/or direct the preparation of meals in accordance with corporate programs and guidelines. This is an exciting opportunity for an energetic, entrepreneurial culinary professional.

Key Responsibilities:

  • Knowledge of P&L accountability is required.
  • Proficient in menu development, cost controls, purchasing and inventory with a focus on consistency sourcing and utilizing local food products when available.
  • Possesses a passion for growth and success with a stable and progressive work history and the ability to assemble a dynamic kitchen team for new locations.
  • Plans regular and daily special menus, changing quarterly, according to established guidelines from senior management.
  • Follows standardized recipes, portioning, consistency and presentation standards.
  • Completes and utilizes daily production worksheets and waste log sheets.
  • Tastes completed meals to ensure quality and consistency.
  • Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation/cross contamination based on Company and regulatory standards.
  • Establishes and maintains a vigorous cleaning and maintenance schedule for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned.
  • Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.
  • Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products.
  • Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits.
  • Follows facility, department, and Company safety policies and procedures to include occurrence reporting.
  • Participates and attends senior management meetings, staff development, and professional programs, as approved.

Preferred Qualifications:

  • Minimum of three to five years of progressive culinary/kitchen management experience, depending upon formal culinary degree or training.
  • Catering experience a plus. Institutional and batch cooking experiences
  • High volume, complex foodservice operations experience - highly desirable
  • Hands-on chef experience a must!
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
  • ServSafe Food Manager certified – Required

MAC ST Hospitality Group is operated by seasoned restaurant professionals with over 30 years experience in the industry.

We are presently rolling out various Greek Inspired concepts, both fast casual and full service.

Our Souvlaki Bar brand is a new fast casual restaurant specializing in true, no frills Greek Food, served in a relaxed comfortable setting. Our goal is to provide the best food and customer service in the industry.

We have several new store locations in the pipeline and are projecting to open 10 locations over the next five years.

Our Greek Taverna concept is a mid to up scale full service restaurant with a bar /lounge area.
Taverna will specialize in spit roasted meats and wood grilled fish in addition to other popular Greek favorites.

Our Greek inspired Café Lounge concept expected to open end of 2017 will include an array of popular Greek and Mediterranean pastries, international coffee's, gourmet salads and sandwiches. The lounge area will provide the comfort and ambiance of a relaxed social forum for casual craft cocktails and conversations.
