Apolonia Restaurant, Chef Stephen Gillanders’ Michelin Bib Gourmand awarded restaurant, is looking for an Events & Floor Manager to join its team!

The 120-seater is at 2201 S. Michigan Avenue, near McCormick Place and Wintrust Arena. It’s on the ground floor of a tri-branded Hilton Hotel that opened in 2018.

General Description:

As a Events, Booking & Floor Manager, your role includes overseeing day-to-day operations of the restaurant to ensure team members are working effectively and that the space is clean, stocked, and complying with health guidelines.

Responsibilities include: 

  • Handle all PDR, Buy-Out and Booking inquiries via phone, email, etc. 
  • Monitor and manage reservations, plot tables and communicate covers and pacing with other managers and employees
  • Ensure food comes out at a timely manner and guests are engaged
  • Staff training and betterment
  • Provide guidance and support the team
  • Promote quality and positive guest experiences by anticipating guests needs and providing excellent customer service and addressing any customer questions and concerns
  • Perform open, mid and closing duties as needed 
  • Handle cash at the beginning and end of shifts
  • Provide support when needed on the floor and/or at the door 
  • Assist with creating FOH schedules
  • Assist with beverage inventory 
  • Place FOH dry goods orders 
  • Provide disciplinary action as needed
  • Provide social media assistance and content population
  • Monitor sales trends and guest preferences, communication any/all information to managers
  • Build personal guest relationships and provide detailed notes for repeat guests and VIPs
  • Develop and maintain awareness of key industry individuals and current events, including but not limited to: regulars, critics, industry leaders, etc. 

Salary and Benefits

A salary of $53,000 is paid out weekly, in addition to a 3% commission on all private dining (PDR) events net sales, and a 1.5% commission on buyout net sales. 

Doubling current event revenues will result in a $1,000 quarterly bonus for each quarter that this figure is met, comparative to year-over-year sales.
