Job Details
The Restaurant General Manager will have the ability to manage the day to day operations of the restaurant and bar, creating an upscale dining experience, executing partnerships and events, and operating in a high paced environment.

Viceroy Chicago, located in the exclusive Gold Coast neighborhood, will mark Viceroy’s first destination in the Windy City. Located at the site of the 1920's-era Cedar Hotel, among historic mansions and just steps to the Magnificent Mile and Lake Michigan, Viceroy Chicago will offer a locally-inspired luxury experience with 180 guestrooms, including 18 suites.   Explore modern, Midwest flavors at the hotel’s restaurant or head up to the rooftop bar, pool and lounge, perched 18 stories high for a sweeping panorama of Great Lake views and Chicago’s iconic, soaring skyline.

 

General Responsibilities Include:

  • Work with the Director of Food & Beverage, Executive Chef and F&B Managers, review menus and beverage lists and food and beverage concepts to maximize revenue.
  • Maintain and improve food and beverage service standards with the objective of consistently meeting and exceeding guest expectations.
  • Work with F&B Managers in overseeing staff training and development, coach and counsel.
  • Constantly monitor guest survey feedback relative to guest satisfaction with food and beverage offerings in order to maintain the highest level of guest satisfaction, review results with colleagues to develop appropriate corrective action and ensure implementation.
  • Complete menu analysis in order to remain market driven at all times.
  • Monitor and analyze the activities and trends of competitive restaurants and bars.
  • Handle all guest complaints, requests and inquiries relative to food and beverage service.
  • Conduct monthly food and beverage meetings, daily briefings.
  • Identify and develop talents within the department for future potential growth.
  • Communicate effectively and professionally with all departments, relaying important information, communicating expectations and appreciations.
  • Must be an example of the Viceroy Ideology, Values, Brand Standards, and a champion of appearance and hygiene guidelines.
  • Adheres to all company safety and sanitation policies and procedures.
  • Perform other job duties and projects as directed.

 

Skills/Knowledge Required:

  • Excellent Communication, Organizational and Problem Solving skills.
  • Be able to effectively present information to customers, clients and other colleagues.
  • Must be service oriented and be able to multi-task.
  • Must have knowledge of Food and Beverage operations and health and safety standards.
  • Must exhibit an approachable and authentic engaging demeanor.
  • Ability to motivate and inspire others to work cooperatively to achieve a designated goal.

 

Physical Requirements:

  • Must be able to walk and stand for up to eight (8) or more hours in length. Position requires walking and giving direction most of the working day. Length of time for these tasks may vary.
  • Must be able to bend, stoop, squat and stretch.
  • Must be able to occasionally lift items up to 50lbs on a regular and continuous basis.
  • Requires grasping, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity.
  • Talking and listening occur continuously in the process if communicating with guests, supervisors and subordinates.

 

Qualification Standards:

  • A  minimum of 2+ years of Food & Beverage experience in a similar role and operation required.
  • Experience in a luxury hotel/resort background preferred.
  • Restaurant Management Certification or college degree preferred.
  • Excellent knowledge of computer accounting programs, math skills, as well as budgetary analysis capabilities required.

Salary Range: $90,000 - $100,000
