The Sommelier is the wine expert. He/she is responsible for maintaining a wine list that meets the goals set by management and for ensuring that proper service of wine is maintained according to the wine service manual. The Sommelier will possess excellent people skills, dedication, an inexhaustible love of wine, food, and service, as well as a quick ability to "read" the guest. The ideal candidate should have at least 3 years of fine dining experience.
