Pirouette Café & Wine Shop is hiring full-time and part-time positions in its kitchen! We are a comfortable neighborhood restaurant and wine shop, where guests can drop in to taste and take home wines, or stay to enjoy a curated menu of fresh takes on modern cuisine. Led by a young talented chef, our kitchen is a place to grow your skill set, food knowledge, and practice daily kitchen discipline. Our priority is staffing the opening dinner shifts. We are, however, accepting and interviewing for all positions with the goal to add lunch service as soon as possible. Pirouette is closed on Mondays and has a short menu, daytime service on Sundays. Skills are desired, but minimum experience is welcome; we ask only that you bring a good work ethic. Hard work will be incentivized by wage growth for learning new stations and skill sets. Full time work is preferred.
We are currently interviewing for a Sous Chef within our restaurant to have a direct hand in the overall operation and flow of the kitchen at Pirouette. The sous will work directly with the Chef to execute the following items with the eventual goal of working into more of an Executive Sous Role over time:

Responsibilities Related to Pirouette’s Food Program:
• Assist the Executive Chef in overseeing, tasting, maintaining the overall food quality in all aspects of Pirouette.
• Supervise the expedition, production, and preparation of food in absence of and in assistance to the Executive Chef.
• Assist the Executive Chef in research & development of new recipes, while adjusting old recipes to maintain quality.
• In time, assist the Executive Chef in the development and execution of seasonal menu changes, special items, special wine dinner pairing menus, catering menus and prep for those.
• Assist the Executive Chef in more difficult/advanced items of prep, such as: Butchery, baking, pastry and pasta production, batch sauce making.
• Assist the Executive Chef in ordering the Food/Grocery/Produce/Meat/Dairy/Seafood used for the restaurant.
• Oversee the daily prep production in the restaurant while communicating needs in real time with the Executive Chef and Owners.
• Ensure that BOH staff is working diligently, and following the standard, practices, and recipes set by example of the Executive Chef in his/her absence.
• Assist with the production of food on the hot line, in prep, or in the dish pit if needed in the moment.
Responsibilities Related to Personnel:
• Assist the Executive Chef in the training of all BOH Staff, including in proper product receiving and storage.
• Assist the Executive Chef set the standard of professionalism within the kitchen at Pirouette.
• Direct and lead the BOH team daily.
• Communicate with and manage team in a professional and respectful manner, alerting the Executive Chef to any discipline or workplace issues as they arise in real time.
• Assist/coordinate the staff in a daily family meal production in time.
Responsibilities Related to Financial Management:
• Assist the Executive Chef in maintaining food costs at budget goals by communicating food production/receiving issues in real time.
Responsibilities Related to Safety and Sanitation:
• Maintain an A rating in terms of Food Health and Safety Standards.
• Coordinate with the Executive Chef to delegate & maintain the cleanliness of the kitchen, and all BOH cleaning projects.
• Comply with state and local requirements for a recycling and trash program.
