Led by Chef/Owner, Will Gilson, our team brings an award-winning mix of culinary and beverage acumen that affords our guests the opportunity to enjoy high-quality, thoughtfully prepared food, local and eclectic beers, and wines from independent winemakers worldwide. Our space is spacious and lively. Our staff is down to earth. We aim to share our excitement about our food and wine throughout each concept. Our guests and their friends should feel comfortable in our friendly, warm environment.

The Lexington, located in Cambridge Crossing, is a hub to pharma + biotech companies, as well as a new, growing neighborhood. The space offers a roof deck, 18 seat bar, and 60 seat dining room, in addition to our private dining room. We are a stone's throw from the new Lechmere Green Line and a quick walk from Community College on the Orange Line.


Sous Chef Responsibilities and Expectations include but are not limited to:

-Kitchen/Food Responsibilities

  • Maintain clean and organized work stations/kitchen
    • All hotline prep areas
    • Walk-in organization daily
    • Managing daily kitchen cleanliness, ie. trash removal, sweep/mop floors/cafe bathrooms
  • Daily and weekly ordering
    • Communicating ordering needs to correct personal 
    • Daily visual inventory of needs
    • Ordering in conjunction with all outlets to streamline building needs
  • Putting away orders 
    • Help put away orders in the proper place to keep walk in/ dry storage organized 
    • Delegate where items go to insure walk-in stays organized and like items are together and correctly FIFO’ed

-Personal Kitchen Management

  • Coaching and training line cooks on best practices, standards, and preparation
    • Running expo/production during prime service times
    • Checking food quality and consistency daily
    • Recipe standardization
    • Constructive communication during service to management/support staff
    • With assistance from Exec Chef/CDC, constructive communication in times of corrective action for support staff 
  • Working in conjunction with all kitchen outlets to ensure cohesive kitchen team
    • Support for all management/staff regardless of outlet in any/all areas of needs ie. ordering, cleanliness, preparation, interpersonal communication
  • Taking note of the needs of the kitchen in order to set themselves and their team up for success
    • Communication with all kitchen managers regarding needs/improvements
    • Implementing change as directed by Exec Chef/CDC

-FOH Management/Staff 

  • Work with the FOH to ensure a cohesive and efficient environment between FOH and BOH
    • Effective and Constructive communication between departments across all levels
    • Timely communication of menu changes ie. subtitutions, additions, 86’s



Compensation Details

Compensation: Salary ($65,000.00 - $70,000.00)

THE LEXINGTON
The Lexington is the hub of Cambridge Crossing. Featuring one of the only roof decks in the area, The Lexington will be the go-to destination for lunch, after work drinks, evening get-togethers, and possibly the first or last stop of an evening out. The Lexington will offer seasonal outdoor seating with views of The Common.

The Lexington has been designed with an open greenhouse layout, and can accommodate full buyouts of business events, weddings, or seasonal holiday parties. It also features a private dining room with seating for up to 30 guests.

GEPPETTO
Drawing from his love of Northern Italian food, Chef Gilson will bring the flavors and feasts from Italy to our modern, dinner only restaurant. Ingredients of the dishes will highlight the farms, fishers, and foragers of New England. Guests can dine on composed platters of cheese, cured meats, and small bites to start their meal. Housemade pastas, local seafood, and fresh butchered meats will be the highlight of an evening at Geppetto - all concluded by desserts from one of the city’s leading pastry chefs, Brian Mercury.
