Five Acres is Michelin Star Chef Greg Baxtrom's fourth restaurant in New York City. With this project, he is reimagining the Farm to Table concept in a gut-renovated Rockefeller Plaza space. Open for breakfast, lunch and dinner, the seasonal menus will feature creative takes on some of Chef Baxtrom's key fine-dining recipes and techniques. Opening is slated for Fall 2022.
RESPONSIBILITIES
As a Floor Manager, your primary focus is ensuring an exemplary guest experience. You will also play a key role in establishing a positive, energetic morale for the hourly FOH team, lead preshift meetings, schedule employees based on labor budgets and sales forecasts, and actively monitor and control payroll through daily timecard checks, real-time cuts and staffing par adjustments.
Additional responsibilities will include but are not limited to:
- Supervision of all service team employees
- Opening duties, including: leading pre-shift meetings, liaising with the culinary team to stay informed on menu changes and service notes, adjusting staffing according to cover counts and spread of reservations, ensuring service staff and dining room are prepared for service.
- Directing the flow of service, providing consistent leadership and delegating responsibilities, through leading-by-example, communicating with the kitchen and door teams.
- Addressing technical or facilities issues as they arise
- Touching tables to establish relationships with guests and build Resy profiles
- Closing duties, including: recording staff tips and hours, reconciling cash, writing service recap, checking service team closing duties and performing a final walkthrough of the restaurant
- Effectively communicating guest feedback to the rest of the leadership team and participating as needed in any necessary follow-up with guests or hourly team members
- Assist with hiring, training and education of front-of-house staff
- Motivating and leading staff to perform at the highest possible level through positive reinforcement
- Participate in ongoing staff training and development, collaborating with the rest of the management team to identify and address opportunities for feedback and coaching among the FOH staff
Qualified Floor Manager candidates will possess:
- A minimum of two years experience in a hospitality leadership role, michelin or fast paced experience preferred
- Strong emotional intelligence
- Organization and multitasking skills
- Strong attention to detail
- Knowledge of principles and processes for providing guest services, including customer needs assessment, meeting quality standards for services, and evaluation of guest satisfaction
- Effective communication, especially when providing feedback or coaching
- Stamina to stand for long periods of time
