Hanoi House is in search of an experienced and self-sufficient Pastry Sous Chef for a new dessert concept. With a focus on pastry production, you will be responsible for preparing recipes based on our weekly production plan while maintaining organization, FIFO, and sanitation in the pastry prep spaces. You are a self-starter with at least 2 years experience in bakery or pastry production who, once trained, needs little guidance. A minimum of 3 shifts from Wed-Sun is required; schedule is negotiable. Our ideal candidate has excellent communication and a great understanding of pastry fundamentals.

SKILLS & QUALIFICATIONS:
● Knowledge of baking/pastry fundamentals and the ability to understand recipes and
production methods
● Can navigate daily production plans and checklists
● Able to pinpoint production issues as they arise and approach them with a
solution-based mentality
● Able to use all kitchen equipment including, but not limited to stand mixers, convection
ovens, steamer, soft serve machine, VitaPrep/Robot Coupe, and immersion blenders
● Understands kitchen organization and sanitation in compliance with DOH requirements
● Is goal oriented and works with a sense of urgency
REQUIREMENTS:
● Minimum 2 years experience as a Pastry Production Cook, Baker or similar experience
● NYC Food Handlers certificate
● References from two previous employers

Compensation: Salary/Hourly (Based on Experience)
