Job Details
Position Summary
 
The Sous Chef will assist the Executive Chef in overseeing the health and safety training of all food production staff. The incumbent will oversee the maintenance of the production facility, monitor pars and portion control for prep staff, and provide overall kitchen supervision and production when the Executive Chef is not present. Key responsibility areas include department performance, effective cost controls, training and retention of key employees. 
 
Essential Duties and Responsibilities 
Manage employee relations by ensuring staff communicates with each other in an appropriate and respectful manner at all times.
Maximize the day-to-day and long term productivity goals of the food production/service operations.
Ensure that food, prepared items, supplies, and equipment meet established specifications and quality standards.
Evaluate menu items and recipes, food cost, and production efficiency.
Develop menu additions and specials in all menu categories on a regular and on-going basis.
Provide back-up support/coverage to all positions within food production department as needed.
Ensure that all equipment is in serviceable condition and is being operated in a safe manner.
Assist in developing initiatives to build profitability and maintain effective cost controls in support of these initiatives.
Support in managing and reporting on expenses (payroll + supplies) to aid in controlling costs while ensuring adequate staff and supplies are on hand to provide quality service.
Assist in the preparation of departmental schedules according to business forecast, payroll budget guidelines and productivity requirements.
Assists in conducting regular team member/departmental meetings and administer counseling, discipline to team members as necessary and provide training and recognition to team members at all levels to maintain a team-oriented environment.
Assist in staffing departments with quality team members who value guest service and are committed to high standards of performance.
Follow all policies and procedures put forth by The Hollywood Roosevelt.
Assist as necessary in monthly inventory process.
Other duties as assigned.

Education and Work Experience       
Bachelor’s Degree in related field is ideal; 5 – 7 years of prior Food + Beverage experience in a management role.
Hotel experience preferred.
 
Certificates, Licenses and Registrations
CA Food Manager Certification
