Who We Are
We are a new restaurant concept located in the iconic Reading Terminal Market and recently featured in Philadelphia Inquirer, Philadelphia Magazine and Foobooz. We will be the first to bring cuisine from the country of Georgian and its famed hospitality to downtown Philadelphia. The menu will focus on khachapuri (cheese breads & hot breads), khinkali (oversized soup dumplings) and other favorites of Georgian cuisine. Our menu highlights traditional dishes as well as twists on Georgian fare. Our shop will feature a pantry to which we hope to add our own line of branded Georgian sauces, condiments and other goodies as well as featured Philadelphia makers and designers. This position offers the opportunity to learn an exciting cuisine that is new to the US and quickly growing. The candidate will also have opportunities to help grow an entrepreneurially spirited and creatively minded business.

Job Description
The concept includes a full scale bread program with several different kinds of doughs made daily, both stretched to-order AND baked loaves. Our leadership team believes in treating everybody like FAMILY and as such everyone is treated with respect and equality.
- Preparation and production of high quality menu items in a fast-paced environment.
- Use and understand all recipes and maintain consistency and quality across the menu.
- Prepare doughs accurately, which includes mixing, kneading, dividing, shaping, proofing and baking.
- General preparation of items by cutting, chopping, mixing, and preparing sauces.
- General cooking of food items by using methods specified in recipes and kitchen standards.
- Set up and stock food items and other necessary supplies.
- Cleans and sanitizes cooking surfaces at the end of the shift.
- Maintain cleanliness and comply with food sanitation requirements by properly handling food and ensuring correct storage.
- Gain knowledge and understanding of Georgian and Eastern European cuisine and the uniqueness of the food produced in our kitchen.
Qualifications
Motivated self-starter interested in learning how to develop and grow a food and beverage business from the ground up. Interested in menu and recipe development, releasing new specials and experimenting with fresh ideas. Someone looking to grow their culinary knowledge and add knowledge of international cuisines. Enjoys a professional vibe and has a passion for food and hospitality. Interested in contributing to a team working to build something meaningful and taking the concept to a next level.
- Experience with various cooking methods and basic knife skills.
- General knowledge of bread and dough production is a plus.
- General knowledge of dumpling making is a plus.
- Experience in a fast-paced environment is a plus.
- Punctuality, organizational skills and attention to detail.
- Awareness of basic kitchen practices, e.g. FIFO and labeling, etc.
- Ability to work effectively and collaboratively with all team members.
- Ability to operate large mixers and other tools/equipment in a professional kitchen.
- Min 1-2 Years of experience.
- High school diploma or GED.
- US work authorization required.
- Serve safe certification a plus
- Education in culinary arts is preferred.
- Work and stand/bend and lift 8-9 hours.
- Lift up to 50 pounds.
