Beast + Bottle group is hiring a head pastry assistant to begin work in late summer
Our award winning executive pastry chef, Jodi Polson, is taking a leave of absence from her position to focus on her family. In the interim period, we are looking to hire a head pastry assistant to fill in for her until at least quarter 1 of 2023. Jodi is looking to rejoin the team sometime at the beginning of 2023. A long term position with the company would be offered upon her return
Candidate will be responsible for and oversee pastry menus for our 2 concepts, apple blossom and coperta. Job duties include but are not limited to:
-pastry prep and execution
-plated desserts
-taking dessert inventory
-creating ice cream, gelato, and sorbet flavors
-bread program production
-creating new desserts with an emphasis on seasonality
-executing desserts for banquets
-jam and preservation techniques
-have a working knowledge of traditional italian desserts
-working in tandem via email with executive pastry chef
-overseeing a small team
-working in tandem with chef de cuisine
-cookies, cakes, and pies
*Ideally, candidate will work alongside Jodi for a few weeks before taking over program sometime in mid August 2022*
LOGISTICS
-around 40 hours per week with some out of kitchen time for research and admin
-ideal hours are 6am-4pm, 4 days per week (somewhat negotiable)
-COMPENSATION
-$20/hr plus 4% service charge to the back of the house employees
