Job Details

We are currently seeking a Sous Chef to join the team at the Life House Hotels managed Whitlock Hotel located on 16 Church Street in Lenox, MA. Housing and relocation assistance can be provided for the right candidate.

Our ideal candidate is self-driven, motivated, and hard-working. The individual will have the opportunity to open our new farm-to-table restaurant concept, Ophelia’s. The sous chef can expect a 70/30 time split between kitchen and administrative duties. Strong time management and delegation skills will be indispensable. The position reports directly to the Executive Chef for the property and is supported by the General Manager as well as the F&B team at large.

Responsibilities

Managerial:

  • Involvement in formulation of job descriptions
  • Involvement in hiring and final staffing model
  • Supervise activities of all kitchen staff, including Line cooks, Prep Cooks, Dish
  • Schedule all staff with a focus on financial success
  • Manage performance of staff (including feedback & discipline)
  • Monitors apprenticeship development.

Operational:

  • Ensure appropriate health and safety standards and best practices
  • Master all recipes from prep to plate
  • Determine kitchen flow from prep to service
  • Food Costing of Menu
  • Set up and stock stations with all necessary supplies
  • Chop vegetables, prepare sauces and other food preparation
  • Cook menu items in cooperation with the rest of the kitchen staff
  • Clean up stations and take care of any leftover food

Conceptual:

  • Maintain ongoing involvement in menu and product research and development.
  • Input & Feedback on Training and Development
