Blue Hill at Stone Barns - Chef Dan Barber's internationally recognized farmstead restaurant in Westchester, New York - is looking for a Head Bread Baker to join the team. The Head Baker is responsible for the execution of daily breads and pastry fabrication as well as creating seasonal products in accordance with Blue Hill's standards. The head baker will work directly with breeders, farmers and the Stone Barns center to test and evaluate grains. 

The bakery, complete with a flour mill, offers a unique experience far different than any other. Everything produced in the bakery is milled by the bakers and is 100% whole grain. Used everyday in the bakery are multiple varieties of whole wheat, spelt, einkorn, rye, sorghum and the list goes on. The ideal candidate will have a strong bread background, be organized and technically skilled but be open to trying new things and enjoy being creative.

 

Job requirements:

-Previous experience in a professional kitchen or bakery environment

-Interest in sustainable farming, the local grain economy, and seasonal baking

-Basic knowledge of culinary, baking and pastry techniques

-Able to operate cutting tools and kitchen utensils

-Ability to follow established health and safety regulations

-Flexible schedule

-Works well in a team

-Ability to work on confidential projects

-Able to meet deadlines and work discreetly as needed

-Good organizational skills

-To successfully perform essential job duties, required to stand, reach, lift, bend, kneel, stoop, climb, push and pull items weighing 50 pounds or less

-The position requires manual dexterity; auditory and visual skills and the ability to follow oral/written instructions and procedures

-Diploma from a culinary school will be an advantage

Job Duties:

-Responsible for mixing, preparing and baking fresh loaves of bread/pastries/baked goods for same day

-Ensure the quality of the goods being used is in accordance with Blue Hill's standards and make note of when supplies are running low, so that the order can be made with either the Market Forager or by the head baker

-Attend the cooks meeting daily

-Production of all breads for the dining room, The cafeteria at stone barns, Family Meal, Community Table and Events

-Maintenance and cleaning of work station
