The duties/responsibilities of the position include all of the traditional items that fall under a Sous Chef’s role, including but not limited to:
- Working with the Executive Chef to oversee and lead the back-of-house team. Monitoring and maintaining the highest culinary standards, adhering to budgets, food cost targets, labor models, etc.
- Ensuring all aspects of service and kitchen operations are of the highest standards. Executing services in the absence of the Executive Chef.
- Meeting with the Executive Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance.
- Creating and maintaining a learning environment with the kitchen team while also working on professional development. Maintaining a positive disposition with coworkers.
- Executing and managing prep, stations, and dishes.
- Maintaining complete knowledge of and complying with all departmental policies/service procedures/standards.
- Anticipating guests’ needs, responding promptly and acknowledging all guests, however busy and whatever the time of day.
- Monitoring and maintaining cleanliness, sanitation and organization of assigned work areas. Maintaining and strictly abiding by health regulations and restaurant requirements.
- Checking production schedule and pars; Establishing priority items for the day.
