Job Details

Title: Sous Chef - Cherry Circle Room - Chicago Athletic Association

Reports to: Executive Chef, Chef de Cuisine, Culinary Operations Director 

Position Objective: The Sous Chef is responsible for assisting in the development, cost management, production, and execution of all site menus as well as the hiring, scheduling, and professional development of all staff within their assigned department. 


Essential Duties and Responsibilities:


  • Be a part of the team that develops, collaborates, and executes culinary menus for Cherry Circle Room, Drawing Room, Milk Room, and pop-up or limited run promotions.
  • Assist in ensuring proper costing, consistency, and quality.
  • Enforce all labor laws (federal, state, and local).
  • Ensure kitchen and employees meet state and local requirements for certification and sanitation.
  • Maintain a clean, organized, and safe kitchen.
  • Manage in conjunction with the CDC all kitchen staff, delegate appropriately to line cooks and support staff as needed. Maintain positive relationships and collaboration with the culinary team.
  • Assist in monitoring and maintaining line plating to meet set standards.
  • Assist in kitchen purchasing and receiving.
  • Assist in monthly inventory of kitchen products.
  • Assist in the training and development of kitchen staff.
  • Assist the CDC in the schedule for hourly labor; ensure proper staffing for productivity and high standards of quality as needed.
  • Serve as a role model, lead by example and demonstrate professionalism.
  • Assist the CDC in staff knowledge and training in tandem with front-of-house management.
  • Assist in supporting, monitoring, and maintaining constant contact with team members who are unable to return to work, ensure their needs are heard, and continue current support efforts in place.
  • May perform other duties as they arise
  • Must be able to lift 40 lbs and stand for extended periods of time
  • Kitchen management should be scheduled for five (5) nine(9) to ten (10) hour shifts weekly. Shifts may be added or extended based on on-site needs.

The intimate, James Beard award-winning space ('Outstanding Restaurant Design') has been fully reimagined and restored by Land and Sea Dept., melding the building's historic original features with modern design elements that root the experience firmly in the present.
Land and Sea Dept.’s beverage director Paul McGee offers a cocktail program with an emphasis on American and Scotch whiskey, featuring both seasonal house cocktails and a rotating menu of specialty drinks inspired by an historic bartender or cocktail book. The cocktail program also includes tableside drink service, offering preparations of Manhattans, Martinis, and Old Fashioneds.
We feature an approachable and classic wine program for the Cherry Circle Room, placing an emphasis on American and French wine, with a focus on Cabernet Sauvignon, Chardonnay, and Pinot Noir dominated blends
