ABOUT PORCELAIN

Porcelain is a 40-seat restaurant in Ridgewood, Queens. The kitchen is led by Chef Kate Telfeyan, who joined in April 2021 and co-owns the restaurant with Mike Stamatelos. Porcelain’s cuisine is American, with Korean, Chinese and Japanese as the most pronounced flavors. The restaurant features a strong, producer-first wine program focused on low intervention and sustainable farming.

 

ROLE SUMMARY

Porcelain is looking for a full-time service lead who will have a strong presence and responsibilities on the floor. Most time will be spent serving and supporting the floor, with pre-shift activities focused on administrative tasks; i.e., inventory management, maintenance, and reservation management. Aside from working as the lead server on the floor, this role will be keeping a pulse on the business’s operations and will act as a key thought partner for strategic decisions with owners. This role works five nights a week and will report directly to Chef Kate and co-owner/operator Mike Stamatelos. 

COMPENSATION

This position is paid hourly at $25/h, and is elgibile for tips. Advancement opportunities are available. Benefits include a 401(k) program and flexible time off. This role works 40 hours per week.

 

QUALIFICATIONS OVERVIEW

An ideal candidate for the role has significant serving experience in New York City, a proficiency in wine and, ideally, experience in management. They are interested in owning the floor and taking responsibility for its effectiveness and growth, are efficient communicators and proactively develop and presents points of view. They are a team player and support equal value of front and back of house. They have a strong work ethic and are constantly looking for ways to improve the operation while keeping engaged, alongside the staff, throughout their shift.

PRIMARY SERVICE RESPONSIBILITIES

  • The leader on the floor during service with a focus on addressing customer & staff issues, assuring the staff adheres to protocol, and supporting service as needed (serving, bussing, etc.)
  • Supporting the floor as-needed, including taking sections when neccessary
  • Leading daily line-up: summarizing reservations (citing VIPs and known allergies), overviewing wines by the glass & new bottle debuts, and reviewing observations and improvement areas from the last service
  • Reporting service notes to management nightly
  • Meeting with management team weekly for problem solving and updates
  • Reservation management, including confirming bookings and managing tables during service (assuring turns occur when needed)
  • Helping develop protocols (allergies, VIPs, etc.) as needed
  • Printing menus and posting online daily
  • Assisting events (including buyouts, partial buyouts, and large party reservations) as-needed
  • Assure that all FOH operations (and storage) are following NYC Department of Health codes

 

PRIMARY PRE-SHIFT ADMIN RESPONSIBILITIES

  • Leading a weekly management problem solving with Mike, Kate, and BOH management, including building its agenda, taking minutes, and tracking action items
  • Ordering Front of House (FOH) products (beer & wine) and supplies (paper goods, candles, etc.) as-needed
  • Fielding and addressing staff schedule requests on 7shifts
  • Helping manage the Porcelain social media account and responding to customer feedback through online channels (posting once per day)
  • Receiving and organizing FOH product
  • Building a strong knowledge of the wine list, ordering as-needed

OTHER RESPONSIBILITIES

  • Maintaining professional restaurant image, including restaurant cleanliness and appearance standards by cross-checking dining room setup and assuring floor and dining spaces stay clean throughout service
  • Executing light infrastructure maintenance as needed, including changing lightbulbs, changing water filters, etc. Coordinate with maintenance servicers when needed (e.g., to maintain refrigeration, HVAC, etc.)
  • Receiving packages when delivered and properly storing them

 

QUALIFICATIONS

  • At least 6 years of serving experience, with at least 2 years of experience in a New York City establishment
  • Proficient in food planning and preparation, purchasing, sanitation, security, company policies and procedures, personnel management, recordkeeping, and preparation of reports
  • Possesses laptop with enough power and storage to effectively conduct administrative tasks when needed and can use onsite. Holds sufficient knowledge of computers (Microsoft Excel, using scheduling websites, etc.)
  • Must be eligible to work in the United States
  • Possesses active NYC DOH Food Protection Certificate
  • Given kitchen location, ability to travel up and down stairs multiple times per shift
  • Regularly required to lift and/or move items up to 40 pounds
  • Vision requirements: close vision, distance vision, and ability to adjust and focus
  • Well-organized and detail-oriented
  • High school diploma or GED

Compensation: Hourly ($25.00) plus tips
