Join the experience as we are seeking an Assistant General Manager to assist in overseeing the F&B operations at the newly opening Quoin hotel. The restaurant design have been melded with design features and fixtures from local makers that reflect the building’s original era, features a dining room adorned with warm wood accents, plush upholstered banquets, an illuminating ceiling design, and features an open kitchen showcasing a wood-fired oven & grill focusing on Italian-influenced, wood-fired cuisine that emphasizes the smokiness and char of the wood burning oven & grill. Serving a casual, yet sophisticated & seasonally driven menu, The Quoin is helmed by esteemed chef Jim Burke.

The Assistant General Manager is responsible for managing the beverage function of the restaurant; including all alcoholic and non-alcoholic beverages The Assistant General Manager also supports the General Manager in all operational aspects of the business. Manage staff and daily operations.

 DUTIES AND RESPONSIBILITIES

  • Manage, lead and mentor floor Managers and Staff
  • Ensure service is maintained at the utmost of quality levels
  • Develop risk management and mitigation strategies
  • Represent the GM in investigating, answering, and settling grievances in absence of General Manager
  • Maintain all corporate mandates
  • Update and track daily reports
  • Analyze staffing requirements, develop iteration plans, and assess opportunities for future growth
  • Interview, screen, and recruit job applicants
  • Coach and train management staff
  • Responsible for Team performance – morale, productivity

FISCAL RESPONSIBILITIES 

  • Monitor activities and expenses
  • Assist in setting and monitoring sales forecasts and profitability reports
  • Keep General Manger informed of sales and key issues
  • Increasing sales through marketing, networking and incentives for staff to raise guest check average.
  • Assists in maintaining budgeted revenues, cost of sales (COS), labor, supplies and operating cash flow (OCF). Reviews monthly profit and loss statement and acts on all variances.

REQUIREMENTS 

  • Minimum 5-7 years professional experience
  • Strong management skills
  • Strong influence, interpersonal, communication, problem solving and creative solution generation skills
  • General business acumen
  • Expert knowledge of all Restaurant computer systems
  • Able to quickly integrate into a team and be recognized as a leader
  • Finds problem areas, develops solutions and gets the job done
  • Able to delegate effectively

In addition to the Restaurant, The Quoin will be the home of a 45 seat speakeasy style cocktail bar, that will feature an extensive list of signature crafted cocktails, paying homage to the city’s history and former famous resident’s.
