Hanoi House is in search of an experienced and self-sufficient Pastry Production Cook for a new dessert concept. As a Pastry Production Cook, you will be responsible for preparing recipes based on our weekly production plan while maintaining organization, FIFO, and sanitation in the pastry prep spaces. You are a self-starter with at least 2 years experience in bakery or pastry production who, once trained, needs little guidance. A minimum of 3 shifts from Wed-Sun is required; schedule is negotiable. Our ideal candidate has excellent communication and a great understanding of pastry fundamentals.
Job Responsibilities:
Ability to use all kitchen equipment including, but not limited to stand mixers, convection ovens, steamer, soft serve machine, VitaPrep/Robot Coupe, and immersion blenders
Team player and great communicator
Follow and comply with established Hanoi House procedures, recipes and guidelines
Maintain kitchen cleanliness and comply with DOH standards
Support FOH retail team, if necessary
Track, log and report daily production
Qualifications:
Ability to communicate effectively with the pastry cook and management teams
Minimum 2 years experience as a Pastry Production Cook, Baker or similar experience
Knowledge of baking/pastry fundamentals and the ability to understand recipes and production methods
Understands kitchen organization and sanitation in compliance with DOH requirements
Follow all company standards, SOPs and policies outlined by management team
Goal oriented and works with a sense of urgency
Able to pinpoint production issues as they arise and approach them with a solution-based mentality
Can navigate daily production plans and checklists
Operates with the mindset of “no task too small”
Requirements:
Food Handlers Card
Ability to lift up to 50 lbs
2 years baking, pastry cook or pastry production experience
Deep understanding of pastry methods, techniques, and standards
Excellent interpersonal and communication skills
Flexible schedule, including weekends or evenings, when required
Interest in Vietnamese and South East Asian food, ingredients and flavors
Great eye for detail
Upbeat and positive attitude
