Job Details

Third Space Restaurant Group is opening a New American cocktail bar and restaurant that focuses on sourcing almost every ingredient locally.  We are beginning our search for a Chef de Cuisine to conceive and execute the opening menu for our elevated casual operation, which is set to open later this year.  We are looking to hire someone who will embody our core values of local sourcing practices, and who is committed to developing seasonal dishes that primarily utilize the produce and ingredients of the Northeast.  This is an excellent opportunity for a creative, passionate individual who has the expertise to reach the next level in their career.  


Qualifications

  1. Passion and knowledge about local ingredients and seasonality
  2. Interest in developing relationships with regional farmers and vendors
  3. Knowledge about Philadelphia food culture and history
  4. Creative thinking in ingredient preparation and preservation, especially in relation to food waste
  5. Experience and passion about vegetarian and vegan menu items (not exclusively)
  6. Interest and knowledge in sustainability practices

Duties

  1. Develop recipes and portion specifications in accordance with consumer tastes, product specifications, seasonality and budgetary constraints.
  2. Participate in menu planning activities with the management team to determine purchasing specifications, product and recipe testing and menu development.
  3. Source ingredients from and establish relationships with local farmers and vendors
  4. Oversee the execution of the menu on a nightly basis, including working stations as needed.
  5. Ensure proper cleanliness and sanitation of production and service areas, equipment and employee appearance.
  6. Hire, train, develop and appraise staff effectively. Take corrective action as necessary on a timely basis and in accordance with our house policies.  There will be zero tolerance for racism, sexism, harrassment, or any other discriminatory attitudes or actions.  
  7. Prepare operational reports to analyze progress and adverse trends, and make appropriate recommendations.
  8. Work with the General Manager to ensure consistency of product, identifying potential issues and planning for upcoming events.
  9. Work with Beverage Manager to maximize inventory efficiency and collaborate on menu development
  10. Maintain target food costs and labor costs.
  11. Submit nightly reports on service, sales, labor costs, etc.
  12. Performs other duties as related to the position.

Suggested Education and Experience

  1. Two or more years working management roles in professional kitchens.
  2. Prior experience in menu creation, recipe writing and staff training.

  2. Ability to maintain a positive attitude
  3. Creative  problem-solving skills
  4. Must be able to work flexible hours and days. Must exhibit top-notch teamwork.
  5. Must be able to work well under pressure; meet deadlines and ticket time goals.
  6. Valid ServSafe & Philadelphia Dept of Health certification required upon hire
