We are currently seeking a Sous Chef to join our team and to ensure high quality preparation and execution of food to the standard set by the hotel, ensuring highest levels of guest, company and colleague satisfaction.

Description

Viceroy Chicago, located in the exclusive Gold Coast neighborhood, will mark Viceroy’s first destination in the Windy City. Located at the site of the 1920's-era Cedar Hotel, among historic mansions and just steps to the Magnificent Mile and Lake Michigan, Viceroy Chicago will offer a locally-inspired luxury experience with 180 guestrooms, including 18 suites.   Explore modern, Midwest flavors at the hotel’s restaurant or head up to the rooftop bar, pool and lounge, perched 18 stories high for a sweeping panorama of Great Lake views and Chicago’s iconic, soaring skyline.

 

Scope of this position:

  • Order or requisition food and other supplies, in correlation with Executive Chef, Chef de Cuisine and/or purchasing department, needed to ensure efficient operation.
  • Instruct cooks and other workers in the preparation, cooking, garnishing, and presentation of food as directed by Executive Chef and/or Chef de Cuisine.
  • Visually inspect, select, and use only the freshest food products of the highest standard in the preparation of all menu items
  • Check the quality of raw and cooked food products to ensure that standards are met.
  • Inspect supplies, equipment, and work areas to ensure conformance to quality standards.
  • Report to Executive Chef and/or Chef de Cuisine with any safety issues, engineering concerns, security issues, etc.
  • Supervise and coordinate activities of cooks and workers engaged in food preparation.
  • Ensure a standard of consistent professional behavior is upheld by all members of the Culinary/Stewarding team.
  • Demonstrate new cooking techniques and equipment to staff.
  • Be prepared to work in any station in the kitchen depending on business needs.
  • Determine production schedules and staff requirements necessary to ensure timely delivery of services.
  • Evaluate colleague performance, give guidance, and discipline as necessary to promote quality products
  • Monitor sanitation practices to ensure that employees follow Health Department standards and regulations.

Qualified candidates will possess the following:

  • A minimum of 2+ years’ experience in similar position
  • Experience in a pre-opening environment strongly preferred
  • Advanced knowledge of the principles and practices within the Food & Beverage/Hospitality profession
  • Strong computer literacy, with knowledge of Word, Excel, Word, Outlook and PowerPoint
  • Read and employ math skills for following recipes
  • Exceptional communication skills, passionate, strategic and innovative
  • Ability to lead and manage in an organization where people are considered the most important asset.
  • Ability to work flexible hours, weekends, and holidays.
