Job Details

Apolonia Restaurant, a Michelin Guide Bib Gourmand recipient, is looking for dedicated Line Cooks. 

Chef Stephen Gillander's second restaurant, sister to S.K.Y. in Pilsen, focuses on Coastal Mediterranean cooking, highlighting seafood, pasta, and live fire cooking. 

 Primary responsibiilties include (but are not limited to):

  • Uphold the Apolonia Restaurant values and ideals, as set forth by the Management Team
  • Open and respectful communication in all situations
  • Taking ownership over stations and mise en place
  • Properly execute standardized recipes
  • Ensure the highest levels of cleanliness and organization throughout the restaurant at all times
  • Plate prepared foods based on Chef's guidance
  • Operating and cleaning all utensils/equipment as if they were your own
  • Ensure that the kitchen operation procedures and hygiene meet food safety standards and regulations
  • Report to work on time, in uniform
  • Promote teamwork within the restaurant, creating a positive work environment
  • Perform other job related activities as required or assigned by the manager

Qualifications:
  • Culinary degree or equivalent education and experience, with 2 years of fine dining work experience 
  • Strong sense of urgency and exceptional time management skills 
  • Team player and have strong communication skills
  • Strong organizational skills and active listening skills
  • Basic computer and math skills
  • Willing to work a flexible schedule and holidays

Compensation Details

Compensation: Hourly ($18.00)

Gillanders homaged his wife’s initials at S.K.Y., and now he’s honoring his grandmother’s name with Apolonia, scheduled to open its doors in April in the South Loop. He and his staff will focus on European-Mediterranean cuisine.

The 120-seater is at 2201 S. Michigan Avenue, near McCormick Place and Wintrust Arena. It’s on the ground floor of a tri-branded Hilton Hotel that opened in 2018.
