Dandy Hospitality Group is a hospitality group based in the Nomad area of Manhattan focused on creating high quality cocktail-focused destinations that are approachable, fun and satisfying. With a focus on building neighborhood-driven experiences that are welcoming and act as an extension of the residents living room - a hub for entertainment, hosting, imbibing, meeting and hanging. 


Dandy was formed by a group of industry veterans who have created, managed and successfully opened (and retained) over 50+ bars, restaurants and hotels with experience including: Michelin Guide, Neuehouse, Faena, Dr Smood, Morgans Hotel Group, Gitano and many more iconic institutions and destinations. Dandy will open 3 concepts in 2022, with more to follow, providing a prime canvas for hospitality talent to thrive, grow and rise within an organization while still retaining creative and entrepreneurial autonomy.


Dandy is looking for a Head Bartender to collaborate with the ownership and management team and lead the menu development of the signature rituals and full cocktail, wine, beer and non-alcoholic beverage experience for guests including the pre-opening creation of the menu program (end-to-end) and then overseeing the ongoing menu development, creative cocktail formulation, specs and seasonal program development and beverage costing, system, service and presentations of a craft cocktail bar with a strong overall beverage program opening in Nomad in Q2 2022 in a 8,000 square foot space.  


This is a dream opportunity for a cocktail-focused creative who wants to grow and expand behind the bar and within a bar’s overall leadership. The bar’s three bar outlet features the US’s largest gin collection, and a heavy focus on a craft cocktail program that is ever changing with bars setup as a bartender’s dream - with all similar oversized wells custom made by Perlick and designed by Tobin Ellis. The cocktail program will provide a perfect accompaniment to the small plates that are Japanese & French with a beautiful raw bar program.


The two level space features a social club lounge ‘speakeasy’ below that will operate as a post-dinner destination below the primary bar experience. We have strong aspirations of World’s 50 Best bars here, and the right candidate has similar ambitions, with experience to charge towards that goal.


For the right candidate, this opportunity opens doors for strong personal brand development of the individual in tandem with the program development, with heavy PR and communications focus centered around the menu and overall cocktail program.


Reporting to the General Manager & Bar Manager, the Head Bartender will focus on creating the soul of the cocktail program - being a welcoming face behind the bar, developing signature rituals, cocktails, and seasonal offerings that highlight the unique differentiators within The Ivory Peacock program. This individual will collaborate to confidently lead the bar team, training on specs, garnishes, glassware, and batching needs, creating consistency across all beverage menus, wells and with cost optimization with purchasing and case deals. 


The right candidate is well-versed in traditional and contemporary cocktails and enjoys experimenting with new ideas, techniques, and pairings. They understand the complexity of the bar and thrive to be an influential leader to develop and mentor their team to growth and productivity.

Key Responsibilities, including but not limited to:

  • Acts as one of the bar leaders in the forefront - the face of the guest experience, brand vision and values and contribute to a culture of positivity and high standards that exude across the organization 
  • Create and lead the team to developing an environment exuding of service that is professional, engaging, warm, welcoming and filled with positivity for guests and employees
  • Uphold our standards at all times and treat everyone with courtesy and respect, while providing
  • Recognize,reward and create opportunities for team members to collaborate on feature cocktails, programs and growth development 
  • Create, maintain and optimize all bar systems including managing all cleanliness and restocking checklists
  • Conduct and oversees monthly Inventories including: ordering, price updates, accurate par levels, manage overpours and come up with appropriate regular comp program
  • Identify all regulars, and keep system for their preferences to be managed 
  • Ensure all cocktails, non-alcoholic elixirs, wines and beverage rituals are properly made and garnishes look fresh
  • Manage efficiency of bar program with a mandate of a two minute drink time standard while looking for ways to troubleshoot any bottlenecks including the balance of mobile ordering vs. server/bartender ordering
  • Conduct weekly sales promotions with key strategic beverage partners and within the venues, driving sales of key products and setting goals for cocktails. Collaborate with partners to achieve creative ways to generate upsells
  • Create initial training and standards guides and conduct all pre opening trainings including establishing all SOPs and systems
  • Partner with brands to conduct ongoing training on key products, product categories and new items boosting spirits, wine knowledge and ongoing service training including BarSmarts, etc.
  • Conduct ongoing POS maintenance and management to confirm that drinks are appropriately priced in POS and modification options are consistent/clear to the team
  • Conduct and maintain accurate records on beer counts, draft usage, waste, inventory, bar costs
  • Conduct weekly inventories to ensure an adequate supply of beverages, smallwares, bar tools and supplies
  • Conduct weekly equipment checks to ensure all are operational 
  • Oversee and direct purchasing operations of ingredients and liquor including negotiations with suppliers in conjunction with General Manager, Executive Chef & COO, as needed 
  • Must always maintain a clean, polished and presentable workspace, and ensure the team does the same 
  • Implement and adhere to the Health and Safety policies, state regulations and all liquor authority guidelines

Qualifications:

  • 5+ years as a bartender within a notable cocktail bar 
  • Experience in being a leader within a bar team, with indirect or direct supervision and leadership opportunities 
  • Experience on a pre-opening bar team preferred, but not required
  • Superior understanding and hands-on experience in cocktail culture and in creating all classic cocktails, imagining new cocktails and creating a balanced beverage experience within every glass 
  • Media training, cocktail contest and event experience and/or interest in being a ‘face’ behind the program including leading the venue’s participation in industry events and contests, events such as Tales of the Cocktail, development of cocktails for awards submissions and participating in interviews, sometimes requiring travel 
  • Strong understanding of how cocktail development impacts cost and the ability to manage to efficient beverage cost
  • Proficiency in batching, creating service efficiencies and creating systems for enhanced speed yet retained quality in the glass 
  • Extensive experience in creating unique syrups, garnishes and cocktail menu development to aid in creating a memorable, ownable and unique cocktail program 
  • Solid grasp on all key beverage categories including wine, spirits and beverages as well as food knowledge, extensive gin knowledge and love for gin is a plus 
  • Strong business acumen, including an understanding of budgets and operating costs, and the ability to ensure bar program achieves both 
  • Ability to manage multiple priorities and meet strict deadlines while ensuring team does hte same 
  • A strong passion for food and beverage with an emphasis on hospitality driven service
  • Have strong attention to detail and the ability to retain and clearly articulate details of the both the food and beverage menu
  • Strong written and oral communications skills alongside systematic approach to organization
  • Possess all New York mandated food safety certifications 

Physical Demands & Work Experience:

  • Must be able to stand, lift and bend for extended periods of time
  • Must be able to bend and lift to 50 lbs 
  • Role may include job duties or tasks requiring repetitive motion, movement and navigation throughout a bilevel venue
  • Potential to exposure to hot kitchen elements, raw foods, and/or cleaning materials.
  • Must be able to remain focused in a fast-paced and ever-changing environment.
  • Ability to work a flexible schedule inclusive of varying shifts such as days, evenings, weekends and holidays
