Responsibilities Include:

  • Overseeing the operations and running the shift within the kitchen;
  • Supervising activities of specialist chefs, chefs, cooks and other kitchen workers;
  • Demonstrating new cooking techniques and new equipment to cooking staff;
  • May plan menus and requisition food and kitchen supplies;
  • May prepare and cook meals or specialty foods;
  • May input orders into purchasing tool;
  • Ensuring HACCP systems and Betterchains checklists are carried out;
  • Ensuring all staff training is up to date and recorded;
  • Keen understanding of cost control and measures;
  • Responsible for sense checking labels for correct allergens and ingredients and catching any errors;
  • Uniform checking of all staff under their remit;
  • Working with Meta Chef to plan advance menu implementation and corresponding programming; and
  • Overall ownership of kitchen cleanliness and deep cleaning schedules.

Skills & Qualifications:

  • A minimum of 5 years of progressive culinary management experience;
  • Food Handler’s License for DC;
  • Prior experience and success in running a busy kitchen;
  • Experience hiring, training and mentoring salaried managers and hourly BOH staff;
  • Strong financial acumen with the proven ability to oversee cost control, labor management and bottom-line profitability;
  • Ability to drive performance and results of a diverse culinary workforce;
  • Computer Skills: Word, Excel, PowerPoint, and Cloud-Based Services;
  • Wide array of cuisine and culinary experience; and
  • Knowledge of ingredient substitution in order to accommodate a variety of dietary restrictions.
