Chef de Cuisine

The Chef de Cuisine is an integral part of the Hospitality team and reports to the offsite Executive Chef.
ESSENTIAL FUNCTIONS
- Complete culinary execution of our wine & food programs. Enhances the guest experience with presentation and flavor profiles.
- Uses seasonal food pairings to complement & enhance wines, based on what is available/seasonal in the gardens.
- Day to day management of all operational aspects of the kitchen to include all ordering of food and supplies on a weekly basis.
- Maintain food and other costs to keep within designated budgets.
- Assists with recipe development/creation for our wine club shipments and our blog.
- Enforce adherence to safety procedures and cleanliness standards throughout kitchen.
- Other duties and special projects as assigned.

MINIMUM QUALIFICATIONS
- College or culinary training or extensive cooking and production experience
- Minimum of 2 years in a chef position of a restaurant, tasting room, or hospitality destination; inclusive of all culinary positions from appetizers, grilling, sauté, fromage, as well as deserts and pastries.
- Food & Wine pairing knowledge is essential.
- Awareness of local, state and federal health and sanitation requirements
- Understanding of proper use of kitchen equipment, such as stoves, refrigeration, slicers and knives
- Serve Safe Certification Required
- Must be a team player, flexible, and willing to always “go the extra mile.” and have a positive attitude and outlook.
- Must be able to multi-task and remain calm under pressure.
- Valid driver’s license and clean DMV record; at least 21 years of age.
- Required to lift and move up to 40 pounds.

- Experience with maintaining a professional demeanor that positively reflects on the company.
- Skilled in solving practical problems and dealing with a variety of concrete variables in situations where only limited standardization exists.
