Kitchen Manager
The Kitchen Manager oversees the day-to-day operations of the Colada Shop kitchen and is responsible for supporting, managing, and developing all BOH team members to exceed business goals.
Duties and Responsibilities
- Customer Service
- Ensure smooth day-to-day operations of designated store. Foster and promote a strong work culture, CUBANISM and uphold brand service standards.
- Fully understand the Colada Shop ethos and serve as a brand ambassador, both internally and externally, making people’s lives a little sweeter.
- Manage team environment and provide timely response to staff needs.
- Handle payroll and scheduling. Anticipate schedule changes based on store needs and seasonality, and ensure all staffing needs are met while meeting the budget. Manage attendance, call outs and tardiness.
- Maintain 100% compliance with all relevant policies; EEO, labor, HR, wage and food safety laws and regulations.
- Manage staff contests, including but not limited to: BOH Employee of the Quarter.
- Operations
- Manage all existing recipes for production efficiency and cost effectiveness.
- Ensure the highest product quality by auditing production procedures, in order to achieve Colada Shop’s quality standards.
- Manage internal controls at all units, and ensure recipe, techniques and standards are at their highest level.
- Assist active purchasing of food items on a weekly basis to ensure best pricing and quality.
- Utilize kitchen management software and ensure that it connects accounting with POS, and tracks inventory, ordering, invoicing, accounts payable and costing.
- Ensure commissary production sustains store operations and adjusts pars as needed. Anticipate future demand and adjust volume on a timely basis.
- Manage inventories and minimize waste.
- Meet financial goals, such as but not limited to: labor cost, COGS, waste, etc.
- Be knowledgeable with troubleshooting any and all equipment issues, and minimize the use of external technicians.
- Attend 1x1 meeting with Director of Culinary Operations.
- Update BOH binder and all other operational / training materials. Maintain and enforce daily checklists, including but not limited to: temperature logs, FIFO, deep clean tasks and AM / PM checklists.
- Ensure Food Safety and Sanitation Standards are met.
- Oversee all menu changes and ensure they are properly executed. Communicate all menu changes to BOH staff.
- Oversee all BOH staff communication.
- Coordinate Staff Trainings as Required.
- Address any facilities, technical and art requests with corresponding departments..
Qualifications
- 3-5 years managerial / supervisory experience required in the hospitality or food industry.
- Strong leadership, decision making and multitasking skills.
- Strong communication skills. Ability to solve problems independently and delegate as needed.
- Strong understanding of financials, metrics, forecasting, dynamic scheduling and cost control.
- Experience in beverage, food and alcohol purchasing, managing cost and maintaining inventory.
- Food handler card required.
- ABRA card required (for DC stores).
- Serve-Safe certification required.
- Passion for food, cocktails and coffee - big plus.
- Ability to build relationships and embrace change.
- Full availability, must be able to work weekends and holidays.
