The Role

Reporting into the Executive Chef + Executive Sous Chef the Banquet Chef will be primarily responsible for the planning, organizing, controlling, and directing the work of employees in the Banquet Kitchen Department. Overseeing the food preparation of all banquet and catering events while always ensuring superior quality and consistency.

Additionally, the Banquet Chef will be responsible for helping develop new banquet menus, preparing, testing, taste, and controlling out new menu items. Maintain updated and accurate recipes and costing of all dishes prepared for banquet functions. Also, review the following day's menus and approve the store requisitions for food and supplies needed from various kitchen storerooms.

NeueHouse’s team is lean and operates with a mindset of “no task is too small.”  The Banquet Chef must expect to manage through ambiguity and will need to be ready to support all NH departments in meeting the needs of the house.

Responsibilities & Requirements
The role requires someone who is ready to:

  • Review banquet event orders (BEO) on a daily basis and make note of any changes.
  • Brief the banquet kitchen staff daily about the upcoming and current functions.
  • Supervises and coordinates all activities of cooks and banquet kitchen staff who are engaged in food preparation.
  • Able to coordinate banquet production and plating with the Executive Chef, Sous Chef, and Banquet Captain.
  • Establish the day’s priorities and assign production and preparation tasks for the banquet kitchen staff/chefs to execute.
  • Assist in determining the minimum and maximum stocks of all food, cooking supplies, and equipment.
  • Maintain inventory control procedures and ensure that the banquet kitchen is prepared for the following day's work.
  • Responsible for managing all day-to-day operations of banquet kitchen.
  • Responsible to conduct frequent walkthroughs of each kitchen area and directing respective personnel to correct any deficiencies.
  • Ensure that each banquet kitchen work area is stocked with specified tools, supplies, and equipment to meet the house operating and business demand.
  • Ensure that recipe cards, production schedules, plating guides, photographs are current and posted.
  • Review sales and food costs with the Executive Chef to ensure that the banquet kitchen is meeting budgeted costs.
  • Monitor the performance of banquet kitchen staff and ensure all procedures are completed to the department standards.
  • Reviews staffing levels to ensure that guest service, operational needs, and financial objectives are met.
  • Assists as needed in the interviewing and hiring of employee team members with appropriate skills.

We are looking to connect with candidates who bring:

  • Three years of experience in a similar role 
  • The ability to create, produce and scale recipes for special events  
  • Ability to work in a team and independently. 
  • Ability to multi-task and meet multiple deadlines in a fast-paced environment. 
  • Ability to maintain composure in a potentially stressful environment. 
  • Ability to read and comprehend spreadsheets and P&L statements. 
  • California Food Handlers card (within 30 days of hire) 
  • Must be able to work nights, weekends, and some holidays 
  • General knowledge and understanding of Los Angeles current events, cultural and culinary happenings 
  • Understanding and knowledge of safety, sanitation, and food handling procedures 
  • Knowledge of health department rules and regulations.

  • While performing the duties of this job, the employee is frequently required to stand (a minimum of 8 hours); walk; and use hands to finger, handle, or feel, grasp, and hold objects, tools, or controls. The employee is frequently required to reach with hands and arms; balance; stoop; crouch; bend; talk; hear; taste; and smell. The employee may be required to frequently climb (stairs). The employee is occasionally required to kneel.  
  • The employee must occasionally lift, carry, pull and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
