This is a unique opportunity for you to help lead the Mozza Pastry department for Osteria Mozza, Pizzeria Mozza & Chi Spacca. You will be working and learning directly from James Beard Award-winning Pastry Chef Dahlia Narvaez.

 

Job Description

The Pastry Sous Chef oversees the production of all pastries for Pizzeria Mozza, Osteria Mozza and Chi Spacca Los Angeles locations, including: cakes, desserts, cookies, candies, gelati and other dolci. Reports directly to the Executive Pastry Chef and manages a pastry team of about 6 employees.

  • Supervises and participates in the production of all pastry items for Mozza restaurants
  • Assists in managing the pastry team: schedules; provides feedback and motivation; trains pastry production, principles and practices; coaches and counsels
  • Verifies all foods prepared meet quality standards in terms of portion size, flavor, texture and consistency
  • Produces special orders for events
  • Orders and requisitions all supplies for the pastry department
  • Maintains a clean and sanitary food production area according to Department of Health standards
  • Performs other duties as required or assigned

Qualifications

2+ years of experience in a high-volume pastry preparation position

  • Knowledge of Italian pastries and techniques
  • Excellent communication and leadership skills
  • Intermediate computer skills

Job Requirements

  • Availability to work onsite with a flexible schedule often including evenings, weekends and holidays
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to use a commercial stand mixer and other pastry baking equipment
