This position is responsible for the preparation and service of Itamae sushi menu items; including daily inventory and inspection of all fish and peripheral sushi making ingredients in order to ensure quality control of raw materials. The ideal candidate will have experience in sushi preparation and excellent customer service skills.

Service Standards & Execution
The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation.
- Has minimum of three years of previous experience as a Sushi Chef with High Volume experience; 2 years management or similar role preferred
- Deep Knowledge of Fish Butchery
- Maintains a "sense of urgency" attitude for the completion of responsibilities/tasks
- Ability to work in a fast-paced, high pressure environment
- Consistently maintaining a high degree of cleanliness and organization with appearance, throughout preparation area, and sushi bar
- Managing temperature controls with coolers and sushi counter tops
- Expediting and controlling quality of dishes
- Upkeep and proper storage of product
- Greets, interacts, and communicates with customers on regular basis including taking orders, handling complaints, and educating customers regarding Company products
- Properly display and arrange visual presentation of products in sushi trays and cases
- Ability to work independently and to partner with others to promote an environment of teamwork
Additional Responsibilities
- Communicate effectively, both verbally and in writing, to provide clear direction to the venue teams.
- Communicate with employees using a positive and clear speaking voice, listen to and understand requests, respond with appropriate actions and provide accurate information.
- Remain calm and alert, especially during emergency situations and/or heavy restaurant activity, serving as a role model for team and other employees. Interact with other department personnel and venue staff as needed.
- Make decisions and take actions based on previous experience and good judgment, sometimes revising procedures to accommodate unusual situations.
Physical Demands
- The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting, standing, for 4 to 8 hours, bending, and moving intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.
