Pain d'Avignon is a small business with a serious passion for the craft of bread and pastry making, and for the enjoyment of eating them. We produce fresh breads and pastries daily from our commissary in Long Island City for our wholesale clients, as well as our retail locations at Dekalb Market Hall, Moxy Hotel and Essex Street Market.

We are seeking passionate and dedicated pastry cooks/bakers to join the team and produce pastries that follow our core integrity: simple, natural, fresh.

Pay: Starts at $17, and based on experience.

Schedule: Shifts may start between the hours of 7am- 12pm.

Responsibilities:

The Pastry cooks/Bakers should have lamination experience and know how to use a sheeter. S/he will be assisting with production of laminated items, proofing/baking of laminated items, and mixing doughs/cookies/cakes/scones/fillings.

The Pastry cooks/Bakers need to meet the daily production goals for baked goods. Pastry cooks should know how to follow recipes provided, use a digital scale, and ensure that the products produced in the bakery meet our quality standards while maintaining a clean and sanitary food area.

- Follow production schedule to make and bake the variety and quantity of goods needed
- Measure ingredients to mix croissant doughs, fillings, cakes, scones, cookie dough according to recipes
- Make butter blocks for lamination products
- Roll, cut, and shape dough to form different viennoiserie pastries, breads, and related products timely and efficiently
- Cut, peel, and prepare fruit/nuts for pastry fillings
- Mix icings and other toppings to decorate pastries
- Use a variety of kitchen tools, including sheeter, electric mixers, blenders, cutting tools, rolling pins, and pots/pans
- Bake all pastries/breads to specification and establish a high standard of product quality
- Troubleshoot variables that can affect the production process
- Maintain safe, clean and good working order of production areas and equipment
- Maintain clear and open communication with packing and sales teams
- Assist with training of new members on all aspects of production
- Handle and restock ingredients, tools, and cooking pans
Experience:

- 1 year of experience in lamination using sheeter is ideal
