Who we are:

FCM Hospitality is a Philadelphia-based hospitality and entertainment company, managing bars, restaurants, and seasonal pop-ups throughout the region. The company is a leader with more than 20 years in the hospitality industry, and has developed some of the area’s most popular permanent, seasonal and temporary venues in the city.  

Who we need: 

FCM Hospitality is seeking a dynamic Director of Restaurant Operations to oversee our year round Restaurant Operations facet of our company.  This talented, experienced and collaborative individual will work directly with the Owner and Director of Operations to ensure day to day operations of four of our locations: Harper’s Garden, Lola’s Garden, Rosy’s Taco Bar and Juno.  The ideal candidate will possess at least 5+ years of General Management experience and Operations Management in multi unit hospitality based companies.

Responsibilities (On Location)

  • Oversee daily operations and direct reports (General Managers, FOH Managers, Chefs, Sous Chefs) at Harper’s Garden, Lola’s Garden, Juno and Rosy’s Taco Bar
  • Consult on dining and culinary operations for seasonal and pop up locations
  • Directly report  to Director of Operations and Owner to ensure goals and tasks are being met; act as a liaison between main office and locations
  • Work alongside Culinary Director, Beverage Director, Project Architect and Solutions Director to troubleshoot day to day issues that may arise in the locations
  • Working with HR to recruit, interview and onboard new management, ensure staffing levels are met, labor budget and schedule templates are set for each season
  • On site training of all new managers, development and coaching of current management or employees wishing to enter management positions
  • Working with managers on site to enhance and grow the guest experience, by ensuring steps of service and staff development
  • Shift coverage as needed for management roles (vacation coverage, emergency coverage, etc)
  • Director of Restaurant Operations will be required to spend a minimum of 4 hours per week at each location, nights and weekend as needed

Responsibilities (Office)

  • Work alongside Owner and Director of Operations to develop new concepts and improve and expand current concepts
  • Continue to cultivate relationships with partnering vendors and neighbors: food, farm, alcohol, other restaurant groups
  • Work with Culinary team to create a company wide pastry program, this entails hiring, budgeting and enhancing current menus
  • Working with Beverage team to continue enhancing beverage program and relationship with vendors and dry good suppliers
  • Work with in house Project Manager and Architect on  aesthetic and look of each restaurant, ensuring R&M list is being handled and initiates projects as needed
  • Working with Operations on budgets, planning and staffing per season
  • Work with Operations on recruitment, staffing and finding employees that reflect the diverse population of Philadelphia
