GENERAL DESCRIPTION
Responsible for assisting the Executive Sous Chef with managing and organizing the activities of the kitchen to maintain the highest standards of food quality, cost control and consistency.  

RESPONSIBILITIES
  • Trains, supervises, manages, coaches, counsels and evaluates Porters, Line Cooks, and Temaki Chefs  
  • Manages labor and food cost daily; Maintains awareness of budgetary goals and investigates causes in budgetary misses  
  • Assists with costing all recipes regularly to ensure consistent profitability is achieved 
  • Completes weekly product orders, ensures proper product amounts are maintained to limit  waste/spoilage  
  • Inspects delivery of food to ensure product is of the highest level of quality; Does not receive sub par product  
  • Maintains positive and professional relations with vendors and staff
  • Participates in training of Front of House staff as it pertains to menu and food knowledge  
  • Ensures that all items are prepared properly and timely for service daily  
  • Ensures all position checklists are completed daily and accurately  
  • Ensures that no members of staff are permitted to work if they are not suitably dressed,  groomed, or not in compliance with COVID protocol  
  • Trains all new hires on the expectations of the kitchen, recipes, quality and presentation required for each dish  
  • Collaborates with Executive Chef for menu development, holiday items, special events and  promotions  
  • Conducts line checks multiple times per day when on duty to ensure DOH compliance;  Addresses all DOH violations immediately; Ensures that the kitchen is adequately stocked,  organized and labeled per Department of Health standards  
  • Informs Executive Chef of any maintenance or repairs needed; For immediate issues, report to  Owners  
  • Promotes and practices safe work habits through trainings, education and day-to-day management; Identifies potential safety hazards; Ensures accidents are reported to Executive Chef following proper procedure, conducts initial investigation and determination of root cause of safety incidents in the interest of maintaining a safe work environment  
  • Able to execute Temaki Chef duties and responsibilities  
REQUIRED SKILLS/ABILITIES
  • Highly motivated leader who is able to seamlessly work with different personalities and temperaments
  • Self-starter who takes complete ownership of their work performance 
  • Very organized with an exceptional attention to detail
  • Strong culinary skills which include:
    • Advanced palate
    • Strong spatial reasoning
    • Solid sense of timing
    • Speed and efficiency 
    • Finely tuned sensory skills
    • Expert knife skills 
  • Strong communication skills  
  • Excellent time management skills with a proven ability to meet deadlines 
  • Ability to solve problems independently and delegate as needed 
REQUIRED KNOWLEDGE & EXPERIENCE
  • 2+ years of culinary experience required, preferably in a Sous Chef capacity or higher within a similar caliber concept  
  • Experience costing recipes and recipe input 
  • Extensive knowledge of culinary techniques, procedures and equipment
  • Current with culinary concepts, practices and procedures
  • Expert knowledge of DOH Guidelines
