Apolonia Restaurant, Chef Stephen Gillanders’ new concept in the South Loop and one of Chicago's most anticipated restaurant openings of 2021, is hiring a Server to join its FOH team!

Gillanders homaged his wife’s initials at S.K.Y., and now he’s honoring his grandmother’s name with Apolonia, scheduled to open in April in the South Loop. He and his staff will focus on European-Mediterranean cuisine.

The 120-seater is at 2201 S. Michigan Avenue, near McCormick Place and Wintrust Arena. It’s on the ground floor of a tri-branded Hilton Hotel that opened in 2018.

Job information and benefits include:

  • 4-5 shifts/week, in-time 4pm and we close at 10pm - most staff leaves at or before midnight
  • Average $1000-$1600 in tips weekly
  • You get paid weekly
  • Health Insurance offered after 90 days of employment 
  • Routine wine and service classes 
  • Server experience preferred but not necessary - we are willing to train the right person! 

The Server's priorities and responsibilities are to exceed our guest's expectations by providing them with the highest level of professional, consistent, and courteous service. Primary duties include:

  • Uphold the Apolonia Restaurant values and mission
  • Greet guests with a genuine, welcoming demeanor
  • Inform guests of specials, menu changes, answer questions regarding food, beverages and allergies
  • Take food and beverage orders from guests and relay to kitchen staff and bartender using a Toast POS system
  • Communicate with Manager(s), Maitre’D, kitchen staff, and bartenders
  • Present, open and pour wine and beer when serving guests
  • Assist support team with stocking work stations, removing and resetting used dishes/silverware
  • Provide exemplary service to guests at all times
  • Treat every guest, employee, and vendor with respect
  • Report to work timely, presentable, and in proper uniform
  • Promote teamwork within the restaurant, creating a positive work environment
  • Properly execute all necessary steps of service
  • Ensure the highest levels of cleanliness and organization throughout the restaurant at all times
  • Perform other job related activities as required or assigned by the manager
  • Maintain accurate financial records of the shift, including all discounts and comps
  • Respond positively to guest's requests with a sense of urgency
  • Execute daily side work with enthusiasm and motivation
  • Check with customers to ensure that they are enjoying their experience and meal
