Rootstalk is Chef Matt Vawter's first solo restaurant; which opened in December of 2020. We are a small, upscale, casual restaurant serving dinner located in the heart of beautiful Breckenridge, CO. Our focus is on serving creative, ingredient/technique driven cuisine; a focused and thoughtfully curated wine/beverage list, and a creative cocktail program. Service is attentive, knowledgeable, and genuine for our guests. The culture of our restaurant is our number one focus; creating an environment for our team to achieve their goals, reach their potential and work as a team to create memories for our guests, all while having fun in the mountains!
