Job Summary

The Chef de Cuisine is responsible for directing and organizing the team to maintain high standards of food quality while keeping labor and food costs in line to maximize profits through putting out an outstanding product in a team environment.

Essential Duties

  • Plan purchasing and labor decisions based on weekly sales forecasting
  • Manages overall financial performance of food service departments by determining trends and areas of opportunity, advising others on cost control methods, and resolving budgetary issues ensuring maximum profitability and perception of value
  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining area. Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances
  • Maintain professional restaurant image, including restaurant cleanliness, proper uniforms, and appearance standards
  • Ensure a safe working and guest environment to reduce the risk of injury and accidents. Completes appropriate reports promptly in the event that a guest or employee is injured
  • Empower staff to provide an excellent food experience. Provides on-going training to achieve highest levels of service and product knowledge
  • Lead hiring, supervising, development and, when necessary, termination of employees
  • Maintain an accurate and up-to-date plan of restaurant staffing needs. Prepare schedules and ensure that the resultant is staffed for all shifts

Qualifications

  • 3+ years of Kitchen management experience in a high volume, detail-oriented and excellence driven environment
  • Culinary degree is preferred
  • Excellent work ethic and dedication to the hospitality industry
  • Food handlers certificate required
  • Self-discipline, initiative, leadership ability and outgoing
  • Be able to lift, bend, reach and stoop
  • Be able to work in a standing position for long periods of time (up to 8 hours)
