Job Details
The chef de partie, in collaboration with the Chef, GM, will work closely with the BOH management team to drive service each day and inspire team members to work together and hold one another accountable to the standards set. The chef de partie will maintain compliance with DOH standards, cleanliness, efficiency and overall excellence. Their role could also include administrative work, opening or closing duties, or stepping in to needed roles in the restaurant as business demands. 


Core Tasks and Key Responsibilities


Cultivate a thriving culture of authentic Enlightened Hospitality for all stakeholders that support our business objectives and growth

  • Responsible for all aspects of kitchen operations, specifically in relation to the preparation, cooking, portioning of food and basic wrapping.

· Basic knowledge of common ingredients. Required to retain new knowledge of ingredients used in our cuisine and most specifically in mise en place items assigned to the prep list.


  • Ensures team is working to business standards
  • Assures that line stations are stocked and maintained with sufficient levels of food products
  • Checks in deliveries and ensures they are properly stored
  • Restocks items throughout the shift

· Consistently teaches cooks methods and procedures that will improve their skill and performance

· Consistently leads by example, setting a tone of teamwork, collaboration, and mutual respect

  • Follows recipes provided by Executive Chef and Sous Chef and ensures the entire culinary team does so as well
  • Works with Executive Chef, Sous Chef and cooks to establish and maintain efficiency and consistency
  • Strategically plan for and work through each shift with the ability to plan ahead


Ensures that Cafes at MoMA exudes Operational Excellence

  • Complete all assigned administrative requirements accurately and on time
  • Maintains and properly uses all kitchen equipment
  • Supports the team in whatever capacity is necessary to ensure smooth service and operations
  • Effectively prepares and oversees preparation of all required dishes in a timely manner for specific service period
  • Complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
  • Remain current and compliant with the correct HR practices and policies
  • Ensure DOL/Health Department compliance as it pertains to the operation


Other Qualifications

Relevant Knowledge, Skills, & Ability:

· Excellent Communicator – ability to understand, speak & follow written and verbal instruction

· Understanding of professional cooking and knife handling skills as well as culinary, pastry and production skills

· Knowledge and understanding of safety, sanitation and food handling procedures.

· Attention to detail

· Facility and operations maintenance experience

· Team-oriented

· Manages self calmly and effectively under pressure

· Computer Skills

· Organizational skills


· Preferred Bachelor’s Degree or Certification in Hospitality-related field or equivalent expertise gained from time on the job

· 3 years Culinary experience

· NYC Food Safety Certified

Work Environment:

· Involves sitting, walking and standing for up to 12 hours at a time

· May include occasional lifting and moving of objects of 40lbs or more

· Repetitive hand or arm motions, ability to regularly reach with hands and arms; climb, balance, stoop kneel and crawl

Language: English fluency and Spanish preferred
