Job Summary:

The Food and Beverage Director will oversee and direct the operation of the two full-service restaurants, Members bar, Pool bar, In-Room Dining, and Banquets within the Hotel St. Vincent. This employee will be in touch with the moment to moment needs of all outlets and direct the management teams on the ground executing the services and maintaining standards of excellence at each outlet.


Essential Functions and Duties:

  • Keeping all costs for food and beverage outlets, in room dining, and banquets in line with overall hotel budget for food and beverage
  • Analysis of monthly Food and Beverage inventories and product mixes to guide future procurement and marketing, and to ensure appropriate pricing is applied to all outlets
  • Participation in menu creation for all food and beverage outlets, in room dining and banquets on the Hotel St. Vincent property
  • Monitoring and inventorying necessary OSE for all food and beverage functions throughout the hotel
  • Monthly forecasting for sales at each outlet to reflect seasonal and local demands, mirroring forecasting for occupancy
  • Creation of training systems, protocols and procedures for all Food and Beverage employees at Hotel St. Vincent
  • Overall management of all personnel affiliated with the food and beverage functions of the Hotel St. Vincent. Specifically, mentorship and oversight of all Food and beverage managers in San Lorenzo, Elizabeth St. Café, IRD and Banquets
  • Leading programming and selections for supplemental food and beverage services, such as mini bar and cart services
  • Creation of food and beverage programming and menus for banquets and events
  • Participate in hiring for food and beverage positions


Requirements and Competencies:

  • 5+ years related experience in Hospitality Management role, must have worked in Food and Beverage Department in Hotels previously
  • Experience in Multi-unit leadership role required
  • Financial Management: deep working knowledge of Budgeting, Profit& Loss Statement analysis, and inventory controls
  • Labor Management: must have previous experience in management of multi-department labor budgets
  • Leadership and Mentorship: must have a passion for mentorship and experience training large groups of staff at varying levels of experience
  • Safety: Command knowledge of all safety procedures and processes within Hotel St. Vincent, tasked with training the staff to adhere to and exceed agreed upon standards for safety. This position is also tasked with ensuring compliance with all local, state and national safety standards for operations
  • Trustworthiness: this employee will have access to proprietary documents, and financial statements and must act with discretion in handling this information.

Overseeing the food and beverage program, McGuire Moorman Lambert Hospitality showcases its signature hospitality, design, and modern cooking throughout the property with two
full-service restaurants as well event catering, in-room dining, and multiple bars. The hotel’s signature restaurant, San Lorenzo, serves a coastal Italian-inspired menu that’s influenced by the rich culinary history of New Orleans.

Also located on the grounds will be a second outpost of Elizabeth Street Café, the perennial Austin favorite, featuring a French bakery and Vietnamese café menu.
