The Role - Charcuterie & Cheese Manager

Charcuterie & Cheese Manager  Are you destined to be the ambassador of a vibrant menu of curated meats and cheeses where you hand select the best ingredients creating amazing plates and trays for guests to have a comprehensive palette of tastes from which to choose? You and your team of Cheesemongers will create a culture to nurture passion for fantastic charcuterie and cheese through engaging hospitality providing the destination experience for our guests! As the Charcuterie and Cheese team leader, you will lead Dom’s Kitchen & Market dynamic Charcuterie and Cheese team dedicated to delivering Talk of the Town Guest Service!

Responsibilities - Charcuterie & Cheese Manager

Dom’s Kitchen & Market Charcuterie & Cheese Manager will lead the Charcuterie and Cheese departments and be accountable for total FRESH responsibility in Charcuterie and Cheese that merges your love for people – both team members and guests – with operational excellence. You will be:

  • Measured and rewarded by your ability to deliver Talk of the Town Guest Service, drive optimal Charcuterie/Cheese teams’ performance, maintain FRESH operations and achieve financial targets
  • Accountable for the extraordinary experience of your team and your guests
  • Responsible for engaging conversations with guests and ensure each guest receives an extraordinary Talk of the Town guest experience
  • Focused on driving sales through technical expertise, industry knowledge and innovative merchandising
  • Expected to successfully train develop, retain, mentor and motivate Dom’s Kitchen & Market first-class Charcuterie/Cheese team leading to inspired teamwork creating an inviting atmosphere for guests
  • Expected to assist with work duties across Charcuterie/Cheese including cross-training of team members
  • Challenged daily with Charcuterie/Cheese team to provide world class FRESH conditions and presentations including  recipes followed, consistent Food Prep, Quality, In-Stock, In-Code, product labeling, rotation, temperature checks
  • Accountable for scheduling for the Charcuterie/Cheese team for maximum productivity and high standards of quality that align to business needs and budgeted labor goals
  • Accountable for appropriate Charcuterie/Cheese sales forecasting, planning, ordering, case inventory levels
  • Responsible for food production, food prep is consistent and technically accurate within budgeted ingredient cost goals, institute controls to minimize food/supply waste, implement appropriate repurposing of food waste
  • Responsible for receiving of product, invoice accuracy, vendor commitments, vendor backstock
  • Accountable for backroom, cooler and freezer logistics including minimal inventory levels, freshness dates and organization of product and supplies
  • Responsible that the high standards of Food Safety and Sanitation are maintained at all times throughout Charcuterie/Cheese sales floor, cooler, freezer and backroom including regular cleaning and maintenance of equipment, tables, cases and shelves with organization and sanitation of all backrooms, food prep areas and supplies
  • Listening for the Voice of the Guest to identify Charcuterie/Cheese trends for guest needs and expectations and counsel with Coaching Assistant to integrate findings to deliver value and accelerate growth

Qualifications

  • 5+ years’ Charcuterie/Cheese leader experience in retail, specialty foods shop, hospitality or restaurant
  • 4 year college degree or culinary degree or equivalent experience
  • Experienced Cheese Expert
  • Food Safety Certification preferred
  • Excellent communication, organizational and planning skills
  • Strong cognitive skills, including problem analysis, decision making and financial analysis
  • Advanced computer skills
  • Sense of urgency, time management, prioritization and multitasking skills
  • Detail oriented
  • Ability to maintain composure, meet deadlines and work effectively under pressure in a fast-paced kitchen environment
  • Available to work a flexible schedule including evenings, weekends and holidays
  • Availability must reflect the needs of the business, which may change from time to time
  • Strong sense of team – desire to WIN together with a first-class team

Physical Demands and Work Environment

  • Must be able to perform the following physical activities regularly: Walking, standing, kneeling, reaching, climbing, balancing, stooping, pushing, pulling, lifting, grasping, feeling, talking, hearing and repetitive motions
  • Walking/Standing 90% and sitting 10% of day
  • Frequent movement within the store to access various departments, areas and/or products
  • Physically able to exert up to 50 pounds of force often and exert up to 10 pounds of force constantly to move objects
  • Occasional exposure to extreme temperatures – walk-in coolers and freezers
  • Exposure to chemicals and cleaning products
  • Operating equipment (baler, compactor, power jack)
  • Familiarity with and the ability to utilize kitchen cutlery, slicers, blenders, scales, can openers and other culinary tools
