As the assistant general manager, your responsibilities include:

  • Implement and ensure proper FOH procedures, including cleaning, stocking, Covid-related protocol, Uniform/employee dress code; and define new procedures as needed
  • Staff scheduling: Coordinate with head chef on weekly schedules, managing to labor cost goals and reconciling timesheet errors.
  • Manage guest experience of custom pasta ordering requests and coordinate with management team to execute
  • Ensure all staff licensing & permits are up to date
  • Manage customer service issues in-store and online, including refunds, responses to customer requests/complaints, customer conflict resolution
  • Manage third party tech & relationships, including POS (Toast) and online ordering services (Doordash, Toast online ordering, Tock), including troubleshooting, managing store hours and menu updates, connecting with customer success teams on best practice and ways to optimize sales, and managing accounting issues 
  • Manage ongoing supply inventory to ensure proper supply and reduce costs where possible; perform monthly FOH inventory
  • Employee management
    • Help ensure Tortello is a safe, inclusive, and respectful place to work for the team
    • Flag any employee issues to management team for documentation
    • Hire new FOH employees
    • Staff meetings as needed to communicate important information, trainings, etc
    • Manage and implement necessary trainings, including HACCP
  • Work with accountant to ensure proper tracking of sales, taxes, etc
  • Help with new ideas and implementation, including events & special offers
