Title: Line Cooks & Prep Cooks

Discovery Land Company is seeking an experienced Cook to support our high profile Dune Deck Beach Club location in Westhampton Beach, NY. Dune Deck Beach Club is a seasonal club - operating from Memorial Day to Labor Day weekend

Our food is simple, seasonal and beautifully presented. With an emphasis on Farm and Sea to Table – ingredient-driven cuisine using the freshest locally sourced ingredients farmed, fished or foraged from the Long Island region – we transform the expected into something entirely new. We are searching for individuals who are passionate about food and the art of hospitality. Our company’s objective is to provide an exceptional dining experience that delights the palate and creates memorable experiences for our members and guests.

Key Responsibilities

  • Assist in set up/preparation of culinary program for the season and on a daily basis
  • Prepare food items for any and all food outlets according to designated menus/recipes by Executive Chef
  • Set up assigned station with predetermined mise en place to ready station for service
  • Prepare food items for members/guests as requested using quality predetermined method in a timely/consident manner
  • Cook all food according to recipes, quality/presentation standards and food preparation check lists
  • Demonstrate safe/proper use of all equipment at all times
  • Reduce kitchen waste
  • Consult Sous Chef daily on Restaurant outlet service
  • Understand/implement basic culinary tasks/procedures such as first-in/first-out, labeling, sanitation
  • Monitor all food quality/presentation while preparing food. Stock/rotate food. Alert Sous Chef of low inventory items
  • Work line, salad station, prep station, and any other stations as needed. Control pace of food orders/set tone for ticket flowing process
  • Test foods to determine if cooked sufficiently
  • Operate, maintain, properly clean deep fryer, broiler, stove, steamer, food processor, oven, steam table, flat top grill etc.
  • Advise in preparation of ingredients for cooking, including portioning, chopping, storing food
  • Label, date, store, rotate all products while maintaining assigned stock levels. Control food items requested, maintain without over production
  • Demonstrate proper-efficient production of food items to achieve maximum productivity
  • Assist in set up/break down of work stations
  • Check to ensure correctness of temperatures of appliances/food
  • Follow all company safety and security policies/procedures
  • Prepare cold food items adhering to refile file
  • Monitor taste/visual appearance
  • Cut and trim bone meats and poultry
  • Proficiently perform duties involving food preparation/cold entrée lines as required

Skills and Qualifications

  • High School diploma, GED or equivalent
  • Vocational training, job-related courses
  • Minimum 1 year line/prep cook experience in fine dining restaurant/luxury resort/private club
  • Basic computer skills
  • Perform basic math calculations
  • Frequently lift up to 30 pounds
  • Use hands/fingers to handle/lift items
  • Constantly stand/walk/climb or balance, bend, stoop, kneel, crouch or reach with hands/arms
  • Must be able to stand for extended period

Compensation Details

Compensation: Hourly ($18.00 - $20.00)
