Job Details

Cotogna is a celebration of rustic Italian cuisine and offers a daily-changing menu of spit-roasted or grilled meats and fish, wood-oven pizzas and house-made pastas.

Cotogna's fast changing and exciting wine list features approximately 80 selections of Italian and Californian wines as well as small selection of Champagnes. There is an emphasis on craft wine making, small producers and environmentally conscious farming. All candidates should also feel comfortable referencing the wine list at Quince restaurant, our sister restaurants list that features over 1600 selections from classic wine regions and beyond.

This position offers a large amount of responsibility and the opportunity to work with a vast array of wines in a less formal setting. 

Overall Responsibilities:

  • Assist Cotogna management in the overall operational, administrative, and financial management of the Wine Department.
  • Uphold the highest standards of service in accordance with protocols and practices as outlined in the Quince & Co. service manual.

 Service/Operations

  • Provide wine service to the guests of Cotogna and support the captains during nightly dinner service
  • Assist in wine selections and service of the Cotogna Chef’s table
  • Daily wine stocking of par levels- whites, red and sparkling
  • Submit orders based on par levels and inventory
  • Make wine suggestions and pair wines with menu items. Communicate with chef directly as to the nature and flavors of each dish and match up with the appropriate wine profile
  • Update and produce wine lists, service documents, tasting menus daily, or as needed
  • Represent the wine department at daily line ups
  • Educate staff on new wines, 86’d items
  • Help educate staff on proper wine service, new wines, food and wine pairings
  • Maintain physical inventory of the cellar; racking and restocking wines, processing deliveries
  • Communicate corked wines to management

 Education and Development

  • Attend and participate in-house tasting appointments with Quince wine team and management
  • Maintain professional relationships with purveyors and wine industry professionals
  • Work closely with Chef to develop food and wine knowledge, and pairings for staff education
  • Assist in the training of new FOH hires as it relates to wine service and product knowledge
  • Uphold the QPA handbook standards, protocols and procedures

 Professional and Educational Development

  • Maintain professional education and continued wine studies
  • Participation in outside trade tastings and other educational seminars
  • Prepare and sit for certified wine examinations, with organizations such as the WSET and/or the Court of Master Sommeliers

 Administrative

  • Micros Management- Continually update Micros database by adding new wines, removing 86’d wines and create new numbers when needed
  • Binwise and Bevager experience
  • Audit accuracy of all wine prices as they correspond to the wine list
  • Assist Quince wine team in physical inventory on the first day of every month
  • Buy with a focus on developing the Cotogna wine list and reserve list
  • Return emails, correspondence, phone calls as needed
  • Count physical inventory on the first day of every month and enter in BinWise
  • Analyze variance report following monthly inventory to identify errors and correct

 Financial

  • Communicate with general manager on nightly sales- figures and product mix
  • Targeted sales approach to turn over inventory- identify what is not moving
  • Nightly sales goal $5000 at Cotogna
  • Meet beverage check average, $20 at lunch, $35 at dinner with the beverage percentage of sales goal of 36%
  • Maintain a COG’s, not to exceed 30%
  • Nightly approval of all wine comps
  • Track and request credits for corked wines, submit summary at EOM

 Compensation & Schedule

  • Full time position- 5 days a week, daily hours to be determined
  • An occasional 6 day will be required
  • Quarterly sales incentive
