Launched in 2013, Foxtrot now operates 9 stores and serves thousands of customers in Chicago and Dallas, and we are gearing up for our first of many stores in the Washington D.C. area.


About the Role
Foxtrot is looking for an Executive Commissary Chef in a fast paced, creative atmosphere to start in March of 2020. This Chef will work closely with the Foxtrot Culinary Team to oversee and execute our expanding prepared food and cafe programs. This role will require exceptional leadership and communication skills and an in-depth knowledge of kitchen operations. Strong work ethic and attention to detail required. Duties and Responsibilities:

 

  • Coordinates with Corporate Executive Chef and Director of Culinary Operations
  • Controls Consistency & Quality
  • Directly responsible for on-site control of purchasing, receiving, and inventory of all kitchen items.
  • Provides management and support for all commissary employees ensuring proper scheduling and vacation planning.
  • Ensures kitchen and employees meet both state and local requirements concerning certification, sanitation and personal hygiene.
  • Coaches and provides leadership to all hourly commissary personnel, ensuring the training and development of staff, providing input for performance, appraisals and disciplinary action within the values and standards of Foxtrot.
  • Ensures kitchen equipment is properly maintained and functioning.
  • Able to delegate responsibilities to staff.
  • SERVES AS A ROLE MODEL
  • Monitors food quality to ensure that items are produced according the standards of Foxtrot.
  • Coordinates with store level staff for food training, and to ensure guest expectations are exceeded.
  • Maintains a clean, organized, and safe kitchen
  • Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
  • Enforce all labor laws (federal, state and local)

Requirements

  • 3+ years experience
  • High school education, cooking school or culinary institute education or equivalent experience preferred 
  • Willingness to work mornings, evenings and weekends as required. 
  • Serve safe certification.
